    Ever notice the first step for baking a cookie is almost always to preheat the oven to 350 degrees?
    Even when you’re baking something else, an oven with a digital temperature reader typically defaults to 350. What’s so magical about this number and why is it that so many recipes call for it?
    I spoke with longtime pastry chef and Institute of Culinary Education creative director Michael Laiskonis and found that - as with most “magical” things - it’s actually science.

      Iliekwaffles Canada uses imperial (US measurements) for some stuff and metric for others. Its just useful for different stuff. Like I'm an architect and I like to use feet when designing because I can visualize a foot much easier than a meter. Stairs are a great example for this, since we use one foot on each stair. However, for very long distances, I use kilometers because it's impossible to think of 1000 feet.

      As for baking, all our stoves have both measurements on them. We trade a lot though with america so we just use their system. A lot of everyday life things haven't changed to metric, like weight and height and cooking.

      Philippines uses both as well for different stuff!! Tho some people might prefer one that others may not. Like for example, we all use kilograms when measuring our weight but when measuring height, we might use centimeters for documents for school and stuff and use feet when talking to people about our height ^^

    For those wondering. It takes literally 5 seconds to concert any temperature. 350F - 32=318
    318 divided by 1.8 = 176.66 C repeating.
    You can do this with any number and if you wanna go from Fahrenheit to Celsius just do it completely backwards. Multiply 1.8 then add 32.

      or just google 350f or write 350f in your iphone search thing. I measured the time it takes for me to find out how many celsius 350°F is and it took me 1,63 seconds. It's not hard people, especially when they include the celsius amount in the video

    I see a lot of comments about Metric and Imperial, I don't know about other Metric countries but here in Canada we tend to use both forms of measurements. Pool temperature is almost always said in Fahrenheit, so 80 is great, 75 is cool, and 65 is where did my n*ds go! And baking is always done in Fahrenheit, 350, 450 etc. . . Also, houses are framed with 2x4's in Canada NOT 5x10's so that's also a thing. I always find when measuring that if a distance works out to an even number of centimetres than I'll use that number, but if it works more evenly in inches than I'll use that; I think knowing and using both is so much better. (Oh, and when you post stuff in Canada it's always how many pounds, not how many kgs)
    Edit: And also air temperature is always read in Celsius, so like the "The pool is 78, and that's great because this 30degree weather is killing me."

      Yep. I like to classify it as stuff you study in school tends to be in metric, and stuff you do at home tends to be in imperial. I'd love to be fully metric, but even my stove is in imperial anyway.

    Baking is chemistry, which is why it's so much more important to get your proportions right for your cookies than it is for the rub on your ribs. Which is why I usually convert my baking recipes to mass and measure with a scale instead of volume. Much more precise.

    I bake at 18904 Delsiums my brownies, which are something like 3542 Oxydelzios or 1402 bananometers, which is a measure i personally made up but hey i dont care about the rest of the world

    That animation turning 350 degrees to VOX was a nice touch. The only thing I would suggest is somehow adding the flicker that the display would have.

    Baked for almost 20 years as a professional.350 is a round about number depending on the oven.350 is good for cakes,muffins and cookies and a few other things.400 for breads,danish,croissants,puff dough.A good number of breads go in at about 500 with steam and get dropped to 400.

    All because they used Fahrenheit does not mean Americans are so egocentric to the point they don’t understand what other countries are. It’s not that big of a deal, partially because they included the Celsius measure right at the beginning of the video.
    No need to claim Americans are the entitled ones when 90% of the comments are people complaining their precise temperature needs weren’t met, when the other temperatures are easily resolved with a google search.

      For all of you who will find any insignificant reason to complain about Americans, I did the grueling backbreaking work and converted the other temperatures to Celsius.
      240°F=115°C
      325°F=163°C
      375°F=191°C
      500°F=260°C

      Most of the Americas use Celcius, the U.S. Is the only one. This video was made in the U.S. Thus F instead of C. If you missed the conversion at beginning of video, that is on you. BTW, most U.S. Citizens have knowledge of some sort about the metric system, we are hardly behind the times.

      The real answer is at 2:54 - 3:08. 350 degrees was semi-arbitrarily substituted for "moderate". As the centigrade/Fahrenheit discussion reveals, Europeans bake their cookies at 356 degrees (180 C).

      The people who came with the number specifically used 350 F, then the world changed it from 176 to 180 C for roundness. So it’s not 180C, it’s 176 C rounded up to 180.

      Pretty sure you do Edwin. They don't show conversions for the rest of the video, and Vox is not only for American audiences (certainly much less than some other channels). Also, I think some people still face the shock that America is using a system completely different to everyone else (a system that Sahib correctly pointed at as outdated). Without being on the internet for a long amount of time, I would have never known that.

    I love my new air fryer. It's actually a convection oven for small batches. Just cut the cooking time by half. No oil needed makes foods so much healthier than deep frying. Just use a dip for the food since it will be drier.

    Can everyone shut up about the Fahrenheit. Box already showed 180c. By the way, everyone in Canada cooks in Fahrenheit anyway. Everyone knows what 350F and 425F means in cooking. It's just like how everyone weighs themselves in pounds and measures their height in foot inches.

    Vox produces a lot of junior high school reports.
    No mention that our recipes change to respond to available technology. (Consider pizza recipes for wood-fired vs electric ovens.) You can bake cookies at a lower temperature by adding more moisture to the dough, just as you do for a pizza in a residential oven.

The point of Vox isn't to create PhD level dissertations, it's to create a concise and digestible piece of engaging content that educates viewers. I was already well informed on this topic, but the format was interesting and I learned something and I'll bet you did too so there's no need for any shade to be thrown like that.

      But he's right. Who doesn't know about the Maillard reaction? I don't mean the specifics, it's just that most people know that putting food which has a good amount of protein and sugar under high heat will give a browned, crispy dish. And that it's called Maillard reaction. A lot of recipes even educate you about that. And vox does a lot of videos on topics you should already know about.
      Edit: But they also have very interesting videos, of course. So maybe it's a good mix for everyone.

    I prefer 325F intead of 350F b/c the cookie will be soft and slightly undone in the middle. I did an experiment for this last year for one of my baking and pastry art classes and I found that 375° out of 325F & 350F was the winning degree to bake cookies at according to my chef instructors I personally don't like a golden brown cookie I like it looking like a flattened piece of cookie dough very soft and slightly chewy
