Coffee Biscuits Recipe

  • Make the most of your coffee break with these easy coffee biscuits! They’re seriously tasty, and top contenders for dunking!
    Ingredients
    195g self-raising flour
    100g light brown sugar
    100g unsalted butter, diced
    3 tbsp espresso or very strongly brewed coffee
    1 egg yolk
    100g dark or milk chocolate
    Method
    Line 2 trays with baking paper.
    Combine the flour and sugar in a bowl, then add the butter. Rub together until the mixture resembles breadcrumbs.
    Beat the egg yolk with a fork then combine it with the coffee. Add to the breadcrumb mixture. Continue to rub together and bring the mixture into a ball.
    Break the dough into about 14 pieces. Roll each piece into a ball. Arrange on the baking trays, placing well apart to give them room to spread. Chill in the fridge for 30 mins. Preheat the oven to 170°C/325°F/gas 3.
    Bake for 12-14 minutes until golden and firm. Leave to cool for 10 mins before transferring to a wire rack to cool completely.
    Melt the chocolate in a microwave. Drizzle over the cookies, leave to set, then dive in!
