I worked 30 years as a bricklayer with a trowel, and I can chop, cut and dice and slice as good and even better than any chefs I've seen. How much do they pay you to chop cabbage fast and perfect?

Look closely. He's actually never even close to cutting his fingers the way he's holding, with the fingers "standing". If you were to lay your left hand flat on the item you're cutting it becomes another story, but he's not allowing the blade to rise above his hand or fingers. Therefore, the blade won't cut him on it's way down, it'll just go alongside them. :)
tbh, I've been a home cook for less than a year and I already know how to do this with smaller cabbages (just because that's what I can get in super markets). There is some amount of practice needed to achieve this, but definitely not as much as you think.
