Wow..I make similar type of rice called ghee rice by adding fried raisins, onions ,cashews n curry leaves leaves.. addition of cranberries is new to me .. Tell you something Bumbi, the main thing I got out of this wonderful recipe was how beautiful rice is when it's done by the pasta method as you have done. It's okay using the absorption method but it's not a patch on this. Thanks for sharing.

Yes I feel very frustrated with the supermarkets in the uk. When I decide to make a curry or whatever I have to order spices off the internet. I must admit though that Sainsbury’s do have a larger selection. I wish the others would up their game. Happy cooking😊

I am South African. Whenever I make briyani or pilau, I always cook much more rice than needed. I also fry 2-3 onions more. Then after I layer my dish, I take the leftover rice and onions and layer out separate foil containers using leftover sauce from the cooked dishes. I label and date it “chicken pilau no chicken” or “mutton briyani no mutton” etc. Then I freeze it. I can then later take it out and quickly make some tandoori/tikka chicken or chops to go with it. It freezes really well. I confess that once I found rice at the bottom of my freezer dated three years prior. I used that and no one knew the difference. 😂 I also make my Christmas briyani 2-3 weeks before Christmas.

I realized in the first minute that this dish is not for me (diabetes runs in my family) but I stuck till the end and watched a few more of your videos for your soothing narration. I could meditate to your narration. Maybe explore narration for meditation or children's books? Just a thought.
You needn't add artificial colors. Just add beetroot diced, to the rice when boiling and it'll turn red, add finely chopped spinach for green, orange carrot for orange
For recipes like pulao and biryani, the rice grains need to be all separate and fluffy which can be attained by draining method. The absorption method makes the rice bit soggy and becomes more soggy and sticky when it gets cooked further on dum.

You can add half a teaspoon of ground nutmeg and half a teaspoon of ground mace along with a pinch of yellow food color with warm milk

I mentioned in the video that you can even use hot water. Milk adds up to the flavor when added to anything whereas water is tasteless.
