    Bumbi, this lunch is courtesy of you. We are having 8 people today. I made the cholar dal & kofta curry. Rick made your chicken curry & is making the aloo gobi & I am making the cranberry rice & the pomegranate raita today. We bought samosas from the Desi store (which, unfortunately, is quite far away) & I made the imli & pudina chutneys yesterday. Thank you so much for your wonderful recipes & the kind inspiration. P.S. excuse the epistle please!

    Tell you something Bumbi, the main thing I got out of this wonderful recipe was how beautiful rice is when it's done by the pasta method as you have done. It's okay using the absorption method but it's not a patch on this. Thanks for sharing.

      When I decide to make a curry or whatever I have to order spices off the internet. I must admit though that Sainsbury’s do have a larger selection.

    Super nice as always, Bumbi. Yes, sugar should be in there, but some people can not eat sugar, maybe stevia is an alternative? This is perfect with a mild lamb korma as you say. Made it with pieces of dried apricot, came out really well. And, yes, lots of butter is essential. Thank you!

    I am South African. Whenever I make briyani or pilau, I always cook much more rice than needed. I also fry 2-3 onions more. Then after I layer my dish, I take the leftover rice and onions and layer out separate foil containers using leftover sauce from the cooked dishes. I label and date it “chicken pilau no chicken” or “mutton briyani no mutton” etc. Then I freeze it. I can then later take it out and quickly make some tandoori/tikka chicken or chops to go with it. It freezes really well. I confess that once I found rice at the bottom of my freezer dated three years prior. I used that and no one knew the difference. 😂 I also make my Christmas briyani 2-3 weeks before Christmas.

    • @CurriesWithBumbi
      @CurriesWithBumbi  9 หลายเดือนก่อน

      For recipes like pulao and biryani, the rice grains need to be all separate and fluffy which can be attained by draining method. The absorption method makes the rice bit soggy and becomes more soggy and sticky when it gets cooked further on dum.

      I mentioned in the video that you can even use hot water. Milk adds up to the flavor when added to anything whereas water is tasteless.
