I’ve made DJ’s Ranchero Sauce probably 10 times at least and even though he doesn’t give exact amounts it always turns out delicious! I’ve always relied on recipes to control me but since watching these videos I’ve learned to trust my instincts and be flexible. Ranchero sauce is traditionally made with whatever you have on hand, within limits. It was the flavor of workingman's food when they were on the ranch. If all you have is leftover ground beef, water and a jalapeno, that's what you make it with. Tarragon is plumb out of there, Jack, what are you doing? What I do is make a mirepoix in the slow cooker: equal amounts of carrot, onion and celery, with some garlic and a little olive oil. You can store it in the fridge for a week, or freeze it. Then you add tomatoes and herbs to make spaghetti sauce, or pureed tomatoes, jalepenos (or chipotle etc.), comino, Mexican oregano, whatever, to make ranchero. You can make it into Chinese food, too -- add some sesame oil, rice vinegar and five spice powder and use it with pork in dumplings, or combine with shrimp and stuff squash or peppers, and bake them in the oven. There's no limit.
