I used your recipe...My husband ate all of the Huevos Rancheros. He topped with cheese his mom sent from Micheocan Mexico. He was very impressed and said that's real Mexican food and it brings memories of his Tia who cooked for the whole family.

I had already made your salsa with Chile de arbol and Serrano a few days ago and that went perfect with it. I’ve made quite a few of your dishes and really want to say thank you for sharing your skills with us! I feel my cooking has improved so much since I started watching you!
This is actually the traditional way to make them. A lot of people don’t make em this way. But this is the way it’s supposed to be made. Worth every minute of time it takes to make.
I remember my grandmother making huevos rancheros (my favorite) growing up when I went to visit the family in Guadalajara, Jalisco Mexico. I'm now 65 years old. This was in 1960's to 70's. The recipe must have changed or it was the regional recipe of Guadalajara. They first roast Anaheim peppers and tomatoes on a comal (3 tomatoes to 1 roasted Anaheim for each serving). Wrap the roasted pepper in a towel, then peel them. Then dice the roasted & peeled Anaheim, tomato and onions and fry them with a little oil on a frying pan until the tomato turns into a sauce, season to taste and pour over eggs on a tostada. In Guadalajara, it's just those three ingredients and season to taste with salt for the salsa for huevos rancheros. Well, that's how salsa ranchera use to be made when I grew up in 1960's-70's in Guadalajara, Jalisco Mexico.
The only difference I noticed from your recipe is the chiles. She used Jalapeños and you used chile Anaheim or California and of course the tatemada. That makes a whole difference for the best! That's the beauty of Mexican recipes that they change according to region and the ingredients you have on hand.

I like them this way but sometimes I also top them with chile con queso for a different flavor . Always good to explore something out of the ordinary and not not be stuck on traditional all the time great video you made those eggs perfect.
I’ve made these a couple of times already my husband and my babies love it . They are so good the only thing I do different is I scramble mine and my oldest eggs in a bowl than I cook the eggs. As a child I remember my mom used to make us the huevos rancheros with the tortilla cooked in oil but not tostada it was a soft tortilla, the same way the restaurants in Mexico serve, with refry beans ,over medium egg cover with enough salsa that is the traditional way but still delicious thanks for sharing the way you prepared the huevos rancheros

This recipe is quite nice as it's based on fresh ingredients for the yummy sauce and she does a great job in the video. I was successful in making the recipe but the cooking time for the tomato sauce was longer (about 25 minutes instead of 5 minutes as my tomatoes took a while to soften and break down. I would leave cilantro out of sauce and save to sprinkle on as some folks don't like cilantro and I think fresh tastes better on this dish. I've never had it with beans in it and they add a lot of heartiness to the dish. The tortillas can be crisped but it's easier to cut and eat if left softer. A fun variation is to add bacon bits to the top and use the bacon grease to fry beans = adds a lot of flavor. Gracias Claudia!

I've been eating juevos rancheros all my life. I've never seen anyone make a version of tostadas rancheros. Not how we make in my home, and salsa instead of red chile con carne, or carne adovado?But hey, if your family enjoys them like that, ya'll enjoy. I was kinda thinking something similar, but this version certainly looks delicious, even if it's not exactly the same as how we make it in the San Diego/Tijuana area.
Looks delicious, I have never seen this version before and I've lived in the Southwest all my life. In fact, many of the dishes you prepare are different then what I have experienced, whether it was from my mom's cooking or restaurants in Arizona, New Mexico, and California. Anyway, keep up the great videos, I'm always looking for variations of the foods we enjoy here daily in the Southwest region of the United States.

Not in Guanajuato anyway where I've been living for the past 36 years. I was born and raised in California by the way, my mother is from Mexico. She used to use tomato sauce just like this young lady does though. Tastes great. But not authentic Mexican.
@Winter Pumpkin I know how to make huevos rancheros. I live in Mexico, am a wife, mother and grandmother. I cook only homemade food all day, everyday. Perhaps what I didn't make clear was that canned tomato sauce would never ever be used to make the salsa for huevos rancheros, not ever, nor in any sauce, for that matter, not for rice, nor sopa de fideo (o de pasta). Never. I've never seen it here in Guajuato or in any Mexican city I've been in. As I mentioned in my other post my mother used it quite a bit in her cooking in California, just like this young lady does. That's where she learned to cook, not in Mexico. So when you say that this version is real Mexican, well, I beg to differ. It's still good I imagine, as I said, that's how my mom would have made it.
This is the 3rd recipe of yours that I've made, and it's phenomenal! My fiancé just got back from a hunting trip in Chihuahua, and he's been on an authentic Mexican food kick. This recipe is amazing -- thank you for sharing!
Except for the cilantro, it looks delicious! It seems everybody either loves or hates cilantro, and I'm definitely on the hates side. But everything else looks awesome!

I think they live in New Mexico.. it’s more of a Tex-Mex thing with these ingredients.. but you’re entirely correct.

There are as many ways to cook this as there are Mexicans! I have had this in every town from Monterey to Salina Cruz. I loved every one!
I've been eating juevos rancheros all my life. I've never seen anyone make a version of tostadas rancheros. Not how we make in my home, and salsa instead of red chile con carne, or carne adovado?But hey, if your family enjoys them like that, ya'll enjoy. But if you ever get in my neck of the woods, I'd be glad to cook you up some New Mexico style. Red or green or CHRISTMAS?
I was kinda thinking something similar, but this version certainly looks delicious, even if it's not exactly the same as how we make it in the San Diego/Tijuana area.

Looks delicious, I have never seen this version before and I've lived in the Southwest all my life. In fact, many of the dishes you prepare are different then what I have experienced, whether it was from my mom's cooking or restaurants in Arizona, New Mexico, and California. Anyway, keep up the great videos, I'm always looking for variations of the foods we enjoy here daily in the Southwest region of the United States.

Looks super delicious, but in Texas it’s different, more of a Tex mex style...It always surprises me how many different styles and varieties for the same dish..
Winter Pumpkin Every state has its own influence on Mexican Food...It’s not more American in Texas it’s just different and unique...just like in Mexico, different regions have different ways in cooking... Samething in the states, from California, New Mexico, Arizona and so on...
Winter Pumpkin never said Texas was Mexico, There really ain’t no authentic Mexican dish, if you want to get Technical,what u or I considered “Authentic “may not be considered Authentic in Mexico ... obviously she’s from here with her good English, doesn’t mean it’s Americanized...look that dish up And there’s 100 different ways to make it, so how do u determine what’s authentic?

@Winter PumpkinNot necessarily, I've never seen anyone ever use tomato sauce in Mexico for huevos rancheros, or in any salsa for that matter. Not in Guanajuato anyway where I've been living for the past 36 years. I was born and raised in California by the way, my mother is from Mexico. She used to use tomato sauce just like this young lady does though. Tastes great. But not authentic Mexican.
@Winter Pumpkin I know how to make huevos rancheros. I live in Mexico, am a wife, mother and grandmother. I cook only homemade food all day, everyday. Perhaps what I didn't make clear was that canned tomato sauce would never ever be used to make the salsa for huevos rancheros, not ever, nor in any sauce, for that matter, not for rice, nor sopa de fideo (o de pasta). Never. I've never seen it here in Guajuato or in any Mexican city I've been in.
As I mentioned in my other post my mother used it quite a bit in her cooking in California, just like this young lady does. That's where she learned to cook, not in Mexico.
So when you say that this version is real Mexican, well, I beg to differ. It's still good I imagine, as I said, that's how my mom would have made it.

Except for the cilantro, it looks delicious! It seems everybody either loves or hates cilantro, and I'm definitely on the hates side. But everything else looks awesome!
