i just discovered your channel a few days ago and am currently trying to catch up with all your elder scrolls series. currently on part 12 of your first morrowind series, so i should be caught up to this point in a few years. :P
Sometimes I forget that tamriel rebuilt is a mod, I mean the story lines and quests are so well thought up and it just seamlessly fits in with everything...
Daedric quests in daggerfall are actually way more straightforward than you think. Daedric princes have summoning days, yes, but otherwise it's just giving a big payment to your local temple's or mages guild's daedra summoner. Almost every town will have a local daedra summoner that way. There's one witch coven that summons Hircine regardless of summoning day that's kinda hard to find, and other covens randomly summon a daedra regardless of summoning day. Sheogorath has a chance to override which daedra appears and that chance is higher in a thunderstorm. You can look up the summoning days in the ingame libraries.
