      Actually Chicken Parmigiana is type of Italian American dish which is required special ingredients in it. And I know when Marion made this and some people booed her and said "that's abomination!", Well, Marion has background in Asian and Western culinary before she stepped in Masterchef Australia and also adds little approach of blending Asian and Western ingredients in her cooking videos. That's why, She become famous in her home country................

    Marion. Full disclosure: the first time I made this, I made it to salty. Not too salty to eat but salty. Not positive where I erred but did salt the chicken for an hour and prob put in too much miso paste and too much parm in the bread crumbs. At any rate I had red sauce left over and made again. Salted chicken for only 15 minutes, lessened the parm in the panko, sautéed garlic, added tomato paste, San Marzano whole peeled tomatoes and some chopped basil to the leftover sauce and wow. Also had 2 leftover and my wife is moaning as we speak for more of this soon. She loves red sauce and is wild over this. It’s ridiculous. You’re pretty good with this cooking thing.

    Years ago my Italian boyfriend taught me to make chicken parm and he learned from his mother. They did layers of it in a casserole dish almost like a lasagna and then you cut it into squares to serve. I’ve made it like that ever since but this recipe looks really good!

    Great recipe. Another good option to add salt + umami to tomato sauce is a few anchovies! Leave them in the sauce while cooking and they will melt down.

    Leave it to you to put an Asian spin on a dish I've been making for many years. I've got to admit that I never cook it the same way twice and I thought I had tried every variation. Until now. Miso paste, star anise (if I can find it) and soy sauce are intriguing ingredients that I will try next time. Panko is common (with the addition of some parmesan) in my recipes, but I routinely grind my Panko so it's finer.
    One of my favorite recipes! Thanks for the refinements. Cheers.

    I love her asian twists on the parma. Miso, star anise.
    I was thinking adding Italian and Cheffy twists with buffalo mozzarella, fresh parsley, san marzano tomatoes, basil, parmigiano reggiano, provolone and panko breadcrumbs.

    I really enjoyed the addition of the soy sauce, Miso and star Anise man what a flavour sensation. When you smash the chicken I appreciate the wine bottle idea ❤ empty right 😅😜 I incorporate garlic bread crumbs blitzed in the chopper and olive oil and cook without deep frying thankyou Jamie Oliver 👌♥️💯 try it smash the breadcrumbs with garlic and olive oil with the chicken between kitchen paper so good ❤

    I clutched my pearls so hard at the miso paste and soy sauce at first. But, it absolutely makes sense that they would disappear into the background. No different than using anchovies, really. Looking forward to trying that in my next sauce.

    I like this but a better result for the chicken, I find, is panko/parmigiana breading. No flour.
