    Ingredients:
    1 kg chicken wings
    2 large white onions, thinly sliced
    1 tablespoon ginger paste
    1 tablespoon garlic paste
    2-3 tomatoes, chopped
    2 tablespoons oil
    1 teaspoon turmeric powder
    Salt, to taste
    chilli (to taste)
    Fresh cilantro (coriander leaves), chopped
    Whole Spices:
    1 star anise
    2 bay leaves
    1 cinnamon stick
    2 dried red chilies
    Ground Spices:
    2 tablespoons coriander seeds
    1 tablespoon cumin seeds
    1/2 tablespoon black peppercorns
    5-6 green cardamom pods
    1 small piece of mace
    7-8 cloves
    2 black cardamom pods
    Instructions:
    Preparation:
    Thinly slice the onions and chop the tomatoes.
    Grate or make a paste of garlic and ginger.
    Grind the coriander seeds, cumin seeds, black peppercorns, green cardamom pods, mace, cloves, and black cardamom pods into a fine powder.
    Cook Chicken:
    Heat oil in a large pot.
    Add whole spices (star anise, bay leaves, cinnamon stick, and dried red chilies) and let them splutter.
    Add the ginger-garlic paste and sauté until golden brown.
    Add the sliced onions and sauté until they become slightly soft.
    Add turmeric powder and sauté until it releases its color.
    Add the chicken wings, salt, and sauté until they are well coated with the spices and onions.
    Cover and cook on medium heat, allowing the chicken to steam and cook in its own juices.
    Add Tomatoes and Ground Spices:
    Once the chicken is half-cooked and blended with the onions, add the chopped tomatoes and mix well.
    Add the ground spice mix and sauté for a few minutes until the spices release their aroma.
    Add chopped green chilies according to your taste.
    Simmer:
    Cover the pot again and let the curry cook on low heat for 4 to 5 minutes, allowing the chicken to cook fully and the flavors to meld together.
    If you prefer more gravy, add water as needed and simmer for a few more minutes.
    Garnish and Serve:
    Once the chicken is cooked and the moisture is mostly evaporated, garnish with fresh cilantro.
    Serve hot with steamed rice or roti.
