I am an Indian, and it's beautiful to see when someone from other countries try to understand our culture. And our dishes are also very simple. There are not many sweets, there are, but due to their expense, many people don't buy it. But these dishes are very cheap, and affordable for almost everyone. That's why only one or two pots are enough to make these beautiful and tasty dishes. We make them on special occasions.
In South Africa we use All Purpose Flour roti or chapatis comes out perfect. Or some use brown bread flour.. we use boiling water not cold end ur choice it comes out great 😊

You're such a classic and open-minded chef! Your presentations are impressive and mind-blowing! I like your charcoal technique. Nowadays chefs are using this techniques to give a smoky smell due to scarcity of real tandoors. But more precisely, these are mostly Punjabi dishes! Foods from the Eastern part of India are tastier, especially the biriyani dishes! They use Dum biriyani with a lot of different kinds of spices but with mild yet much more enhanced flavors! I like the Indian classical music that you used in the second half! But, in the first half It's all Chinese music which does not go well with that, although they are nice!

All your ingredients are amazingly fresh, thats what i love! However a couple of corrections for tandoori chicken, we dont use dijon mustard in the paste and if you could use ghee (clarified butter) instead of regular butter please do. That would make it exactly authentic!
Extremely authentic may not be everyone’s choice. I used what I had in the fridge and that is what she is using too. Unless you make her recipe and tasted it, and found it not to be to your liking. But I’ve made this and it’s to die for.

i add less turmeric i.e. 1/4tsp if yr adding 1 tsp chillie powder.. also ginger we add less for chicken a little more for mutton and a little more if yr cooking beef.. Also before adding water to the tomatoes we let the tomatoes get soft on it own then we add water. and chappati for house use we make of whole wheat flour. .. enjoyed watching yr recipies. thank you.

I didn’t use the char charcoal and it was still to die for.
It’s an Indian technique but we use ghee not oil.
Indian use this for ages... Indians put ghee on charcoal to get more aromatic smoked flavour
