I live up in British Columbia and was fortunate enough to shoot a nice bear in early June. I didn't butcher it myself but it's something I'd like to do in the future.

Bear is far better eating than deer much more milder more like beef in my opinion. It's all about taking care of your meat immediately get it cooled down.
