Dude there's so much versatility between all the different cuts of meat. Smoked bear hams are hands down the crowd favorite every time. A bear shoulder or neck in a slow cooker will produce some of THE finest pot roast. One of the reasons meateater is so popular is they show as much care for the cooking of the animal as they do it's acquisition.

I always thought they can be processed relatively quickly once killed, similar to pork.
