Ground masala vegetable sambar/Vattun kolmbo, a traditional GSB recipe

- Ground masala vegetable sambar or vattun kolmbo is a side dish made with split pigeon peas or tur dal and a variety of vegetables. This is a very popular and delicious dish that can be eaten with rice, dosa, chapati, idli, ragi balls, etc. Generally, this dish is a token of welcome for guests who arrive on the eve of a function. We prepare this dish by roasting fresh spices, which makes it more tasty than the powder-based one.
Tips:
- You can use sambar powder instead of roasting and grinding the spices if you have a shortage of time. One or two tablespoons of sambar powder are enough. Add some water and make a paste. Do not add the sambar powder directly as it may result in lumps.
- You can add a small piece of tamarind instead of tomato.
- You can cook tur dal and the vegetables together in the pressure cooker by using separate bowls.
- Coriander leaves enhance the flavour of the sambar, so add them generously.
- If you don't have curry leaves, you can skip them, but they give a nice flavour.
- You can add one or two more chillies if you like it spicy.
