      Often these changeable spaces have options for a theater with proscenium stage (the first layout in this video), and concert hall (the second layout seems to fit this description). Sometimes the change is between theater/stage and banquet hall, but that doesn't seem to apply here.

      ​​@@anniejuan1817 Not quite. The second layout is a Thrust Stage (or Open Stage or Platform Stage). It allows for greater intimacy between performers and audiences than a Proscenium Stage, while still retaining the utility of a backstage area that Theatre-in-the-Round (where the audience surrounds the stage completely) lacks.
      Shakespeare would have performed his plays mostly on Thrust Stages, but it fell out of favour by the 20th century. Some productions still use it, but it tends to not be used for the big Broadway musicals for the most part (there was one production of Cats that comes to mind that did use a Thrust Stage, but it has since closed down).
