Lemon tea is not my cup of tea, really really really good to know what it says in the clip though. I am nearly solely coffee person, seeing you use the same coffee powder - the best off-the rack, in the (other?) clip. lol, bet that you are a very coffee family, It is about time to make good use of my mocha pot..... btw, most ppl miss the fun of being "mischievous"...😆... waste no time on ppl less than ordinary, right? lol keep up with the good works (especially the efforts and time spent on "test & trial"... !!! cheers

亲爱的田小姐,对的分析为何会浑浊的原因深表赞赏,我也曾为此尝试过多重方法。我是一位来自广州的冻柠茶爱好者,我分享一下我目前认为最高效的方法,希望您能采纳。
假设刚冲出来的茶叫茶基,能加冰前饮用的叫茶胆。
1.茶粉与水比例≈1:20,像你用5g茶粉就用100ml水就OK了,水质没有限制。
2.煮好的茶基即时加入白砂糖融化,茶基与白砂糖比例约位3:1,预计你的茶基为90ml,那就是加30g糖。这个可以根据个人口味调节糖量。
3.这里就是关键点了,加糖后的茶基与茶胆比例约为1:3。以得到270ml的茶胆为界线,直接在90ml的已加糖茶基内加冰块搅拌,直至冰块融化为止,这个加冰的量无需称量,只需要加到茶基直到凉透为止,然后加入凉白开到270ml,搅拌均匀,茶胆就OK了。其实是加糖后的茶基在急速降温的情况下,茶是不会浑浊的,这样制作出来的茶胆不论你放冰箱还是常温,2-3天都不会浑浊。
4.冰块和柠檬片随意,根据个人口味,我推荐冰块80%,柠檬片3片,加入茶胆至满就制作完成了。
注意:茶基是必须先加糖再加冰降温,而且糖的量也必须够一定量才行,如果想少甜的话就可以多加凉白开或者冰块。顺序错了就会产生浑浊。我一般保存的是茶胆,要饮用的时候,加冰加柠檬片就OK了。

其實我睇過好多KOL教沖凍檸茶,根本沖唔到茶餐廳既味道,原因係茶餐廳既茶葉係溝出黎,當然好多都係批發商溝完再賣比茶餐廳,主要問題係個茶底,唔知點解奶茶都重可以普通家庭可以做到,唯獨是檸茶真係難度極高,不過我岩岩買左MOKA POT試試,先謝謝你分享

茶餐廳凍檸茶, 下半部是糖水, 上半部是茶胆, 所以會見到D茶色漸漸向下沉, 熱鴛鴦, 成份有三種不同茶葉, 兩種不同咖啡. 這都是一般大排檔的秘密合成.

我發覺用原先條recipe可以一泡, 用50%水充2泡 大概extract到350ml左右嘅份量
