You could probably substitute any root vegetables you like if you can't find them! Or see if you've got an asian grocery store near you. They would most likely carry these veggies if your regular grocery store doesn't.
I love this dish, made it a few times, but the pork always comes out a bit over cooked, but i'm hardly cooking the meat very long. Is there a special way to keep it tender. Please help, other than the pork everything is wonderful

Um squash isn't a root vegetable. Anyway, it might be a little mushy for this. I guess you could do it with Turnips, potatoes, parsnips, and carrots. I'm actually surprised there were no carrots in the recipe.

fireice2037 Parsnips taste a little like a carrot combined with maybe a radish because it has a little spice flavor in it. It isn't a strong tasting veggie and is kind of sweet. They do tend to have a very tough core in the center. I really like them a lot.
