  • Full written recipe for Kathal masala
    Prep time: 10-15 minutes
    Cooking time: 90 minutes
    Serves: 4-5 people
    Ingredients:
    Special garam masala:
    • Badi elaichi (black cardamom) 2 nos.
    • Choti elaichi (green cardamom) 5-6 nos.
    • Jaiphal (nutmeg) ¼ no.
    • Javitri (mace) 1 no.
    • Jeera (cumin seeds) 1 tsp
    • Shah jeera (caraway seeds) 1 tsp
    • Kebab cheeni 1 tsp
    • Laung 10-12 nos.
    • Dagad phool (stone flower) 2 gm
    • Dalchini (Cinnamon) 1 inch
    • Chakri phool (Star anise) 1 no.
    • Salt a small pinch
    For making the kathal masala:
    • Kathal (Jackfruit) 800 gm
    • Mustard oil ½ cup
    • Bay leaves 3-4 nos.
    • Hing ½ tsp
    • Onions 1 medium size (chopped) + ½ kg
    • Salt to taste
    • Fresh ginger garlic paste:
    1. Garlic 18-20 cloves
    2. Ginger 3 inch
    3. Salt a small pinch
    • Special garam masala
    • Garlic cloves (with skin) 10-12 nos.
    • Whole Black peppercorns 1 tsp
    • Red chillies 3-4 broken
    • Kashmiri red chilli powder 1 tbsp
    • Coriander powder 1 tbsp
    • Turmeric powder ½ tsp
    • Hot water as required (quantity mentioned in method section)
    Method:
    • For special garam masala, add all the ingredients of special garam masala in a grinding jar and grind to a fine powder, store it in an airtight container and use accordingly.
    • For making kathal, start by first greasing your hands and knife well with oil, further cut the kathal, by trimming off the head and the skin and further cut in cubes. Wash it thoroughly with fresh water and keep it submerged in water until used later.
    • Set a wok on medium heat, add mustard oil and heat until the smoke releases, lower the flame and add bay leaves, hing and 1 medium size onion, cook until the onions are golden brown in colour.
    • Further add additional ½ kg onion, jackfruit that’s cut into cubes and salt to taste, mix and cook initially on medium high flame for 2-3 minutes, further low down the heat to medium heat and cover and cook for 8-10 minutes, make sure to stir in intervals.
    • As the cooking process is going on, crush the garlic and ginger along with salt, in a mortar pestle, crush them coarsely, try not to make like a paste.
    • After covering and cooking for 10 minutes, and the onions have changed their colour, open the lid and add the freshly crushed ginger & garlic, mix well and increase the flame to medium high heat, cook for 1-2 minutes, further lower the heat to medium heat and cover and cook for 8-10 minutes, make sure to stir in intervals.
    • After cooking for 8-10 minutes, add the special freshly grinded garam masala along with it, add garlic cloves, black peppercorns, red chilli powder, coriander powder and turmeric powder, stir well.
    • Further add 250-300 ml hot water and cook on medium high flame for 7-8 minutes. Low down the heat and cover and cook for 25-30 minutes on medium flame while stirring in regular intervals.
    • Add hot water as required if the masala gets too dry, stir well and cook until the masala has darkened and the oil is released.
    • Further add additional hot boiling water as required, to adjust the consistency of the gravy, I've added 300 ml hot water, and bring to a boil, further cook for 8-10 minutes.
    • Check for the seasoning and adjust accordingly,
    • Finish with freshly chopped coriander, mix well and cook for 1-2 minutes, kathal masala is ready, serve hot with roti or paratha or any indian bread your choice.

    What’s up guys!!! So the wait is over, Kathal masala recipe is finally out! I had shot this recipe a couple of weeks back & there were other recipes to be released before this one. This is a lengthy recipe but turns out to be amazing. For those who don’t know what kathal is, raw jackfruit is used a lot in cooking & preparing recipes like burgers, biryanis or sabjis & tastes mind blowing. Do try this recipe if you have never tried raw jackfruit ever & if you were waiting for this recipe from my kitchen. Also, people who too not like the smell or taste of ripe jackfruits, the raw one has no smell & does not have that taste, so you are secured here. Do try the recipe & let me know how did it turn out.     In bengali culture, we have synonymised Jackfruit as 'Gaach-patha', which translates to 'Meat for vegetarians'. It is bcoz we cook it just like our traditional mutton curry and it tastes divine and exquisite.💞

      Agreed, I keep searching TH-cam for a better way than cooking Bengali way but till date every single recipe has disappointed me. I think l stick to the traditional way of cooking like mutton curry as per our moms.

    I am bengali, we eat jackfruit in summer. In Bengali it's called Echor / Kathal. Thank you chef for this recipe. No one has shown this video before.. It's classy bengali recipe. My mom sometimes makes without onion, garlic only using cumin paste..

    Always use an iron knife, oil, and a lot of cleaning material when chopping a jackfruit. Jackfruits have a lot of sticky white sap inside them, and it doesn't wash out of clothes either. Use a curved sickle (iron) for best results, and dip in oil a little after every slice. And never take the peel out like that with the ripe fruits. It's more efficient to slice completely into the fruit and pick out the individual pods.

    you cooked it so well But my Mom cooks it in 15 min and it tastes so amazing. instead of adding hot water you can deep fry the jackfruit and cook it in a cooker so it will be time-consuming and gas also. But you cook so awesome dishes I follow you from the start and big fan of your cooking.

    I used to cook it like this as you shown but the best way to cook it is very simple, just clean kathal, give it one cooker vissel(half cooked), let it cool,. Heat little oil and lots if ghee, tbs jeera, 2 tez patta, 10-12 crused garlic, salt to taste and add half cooked kathal from cooker and cook it on slow flam for next 35-40 min, it will be mouth watering

    We always make kathal by following this recipe and it tastes amazing every single time. We reduce the quantity of garlic and masala as we eat less masala but then also sabzi tastes so good.

    Lovely recipe as usual! In Maharashtra it is mostly popular as a sweet ripe fruit of which various desserts like Fanasache Sandan and Fanas Poli are made. The raw version can be used for some yummy Fanasache talalele gare or Jackfruit chips in marathi. Jackfruit is a wholesome fruit/vegetable.

    wow. jackfruit is my favourite, whether its chips, fry, masala r even the ripen fruit, i love it. usually i prepare the curry in the same as shown also i add coconut n tomato puree to the gravy. next time i shall try it as shown

    This is famous in South indian weddings where only vegan dishes served. So like minded people do this panasskaya koorma which is jack fruit kurma. Very tasty and looks like non veg curry. Superb taste. And some other curries also been prepared with jack fruit. With moong, mustard tamarind etc.

    we call it fansachi bhaji in konkan and recipe is different but this one is surely looks delicious definitely gonna try this

    But yes I suggest bcz time bht jyada lg rha hai and kathar bhi different types ke hote hai to last me tel chhodne ke bad ap kooker me hotwarer ke sath ek Citi lgade to bilkul gal jayege,which my mom said after tasting 😊
