I love this tutorial because it tells you what to do when you don't want to add a certain thing so you can skip it. Also, it tells you what to add if you don't have a certain ingredient.
My tips for a perfect italian risotto: 1) prefer using Carnaroli rice, since it's full of starch and you will obtain a better result. 2) you always want to toast your rice before putting it into other ingredients, because if you don't your rice won't cook inside. Just cook it alone in a hot pan for some minutes until it smells good (or when you touch it and you burn your hand). 3) make sure your broth is always boiling. 4) most important, add parmigiano after some minutes after turning off the fire, because if you add it before, the oily part of the cheese will separates and you will get a bad result. You can consider adding a tablespoon of butter in this phase, it takes your risotto to another level.

Is is supposed to be a little crunchy? I’ve never had it before so I tried to make it. Process took about 20 minutes. Everything was hot but when I was done it was a little crunchy. I’m assuming I needed to cook longer
@@angiewhitman9076 It really depends on your personal taste. In Milan, where risotto is traditionally made, they use to serve it a little al dente. In general it's better when undercooked in spite of overcooked. Consider that when you turn off the fire the rice will continue to cook a little bit due to the residual heat. Make some experiments and you'll find your perfect recipe! I personally like my risotto just a bit crunchy, you should feel the rice grain under your theet.
@@angiewhitman9076 crunchy sounds like your broth may have been too cold. When that happens you can stop the cooking process and you get grains of rice that are cruncyh on the outside and mushy on the inside.

Just made it, it was delicious! Never thought I'd make something so good. I ended up making a couple of modifications: Added coriander to the mix with the cheese, used cheddar instead of parmesan (couldnt find it at the grocers), and ended up cooking for longer (28 ish mins for me to get it soft) and it was perfect!
Yummy!! I used white mushrooms and pine mushrooms. (White) rice, took about 17 minutes to get to al-dente-but-not-crunchy. Also, added some ground white pepper for added hotness.

We have a machine that's used for making risotto. It's like a stirring rice cooker. You can make anything from risotto to desserts. It's a time saver for Italian households.
Its also nice to cut the mushrooms more rough..big cubes Then pan fry them until golden brown..then add tomatoe concasse, herbs and garlic..always a winner
i would recommend dry toasting the rice in a separate pan, with no oil or butter. if you don’t mind washing an extra pan afterwards it’s really worth the effort :)
do not do this the entire purpose of toasting the rice in the same pan is to coat each individual grain of rice with oil and toast it so that it cooks evenly and will absorb all the cooking liquid even faster and this isnt really the best risotto because it creates a mound on the plate a good risotto should flow along the plate
BlackHilt there’s a difference between toasting and frying. toasting the rice in a dry pan for 4-5 minutes gives it a nice nutty flavour and helps each individual grain keep its shape when cooking in the liquid. once in the pot with the other ingredients it will cook just as evenly. at least that’s what we do in italy! i do agree on the mound thing though
i agree with that but i feel that if you dont have much oil to begin with during the cooking of the onion it coats the rice perfectly and saves time but cheers on that too never heard of doing it that way

Ok, tried today and this recipe's result was good. Thank you. That was not mentioned but you need to be careful about salt. I used meat water, carnaroli rice and grana padano parmesan cheese. Since you need to use salt for extracting meat juice and parmesan gives little bit salty taste, little bit of salt will be sufficient. Also you need to use wine as little as you can use because it gives sour taste more than lemon juice. While cooking mushrooms, they will leave their water outside, you won't need so much wine actually.

Risotto is kind of Sub-Continent's 'Kichri'. Its mostly made when someone is not feeling well or needs a simpler dish. Second, it is close to 'Pulao' which is made with rice and meat-stock but without any creamy texture. Pulao is a novelty.
Do the mushrooms, then more scallions, garlic, salt butter. Then as it turns color add rice and cook until the color changes a bit add good white wine to Deglaze. Add laddie of stock and cook down. I bought this Autumn risotto with shiitake and porcini mushrooms mix from Costco which is actually really good but this is a much better way to cook it than the instructions that came on the jar LOL

You should fry the garlic with the shallots. Put it in 30s after you started frying the shallots. The wine helps contain the flavours as well. So you should add it even if you are making a tomato based risotto, which is naturally acidic. You should almost never really add herbs at the start, they rarely handle heat that well. Add it like 5-3 minutes before you are done. Don't be afraid to use to much oil. I can't remember ever seeing a person use such small amount of oil. The parmesan is only there for the taste. The butter will likely make it taste a bit better, but is optional.
What is this liquid called a stock? I never heard of it before. Have no idea how to translate it to my language. I only know about trading stocks. Can i use water instead or anything else that I actually heard of it before?
The chance is low to vomit up razor blades. They will get stuck in your throat if you manage to swallow them. I wouldn't recommend to exit that way. Throat damage can cause you to vomit constantly. Been there. Needed hospital due to throat damage from hard bread.

you can't use reguler rice, use rice with a high starch content like Arborio, Baldo, and Carnaroli. Furthermore, when making Risotto you don't rinse the rice.

This was AMAZING, 10/10 would make again. I added oregano and mixed herbs in addition to the other spices and it came out great!

That was not mentioned but you need to be careful about salt. I used meat water, carnaroli rice and grana padano parmesan cheese. Since you need to use salt for extracting meat juice and parmesan gives little bit salty taste, little bit of salt will be sufficient. Also you need to use wine as little as you can use because it gives sour taste more than lemon juice. While cooking mushrooms, they will leave their water outside, you won't need so much wine actually.

Do the mushrooms, then more scallions, garlic, salt butter. Then as it turns color add rice and cook until the color changes a bit add good white wine to Deglaze. Add laddie of stock and cook down. Add another laddie and cook down, do again until Aldente. Never stop stirring. Add most of mushrooms and mix. Garnish with rhe rest of the mushrooms and Rajano parmesano. And I like cilantro but have used spring onion greens slivers

I bought this Autumn risotto with shiitake and porcini mushrooms mix from Costco which is actually really good but this is a much better way to cook it than the instructions that came on the jar LOL
I don't really add the water gradually, I just pour everything in, bring to a boil, cover the pot with a lid and turn off the stove...and then I wait for like 20-30 minutes...I kinda stir it a bit from time to time....and it always comes out perfect

Just made this tonight with just chicken. I used chicken broth that was low sodium so I could control the seasoning better. Turned out amazing!! My boyfriend went back for seconds!

I love a well cooked mushroom risotto - the best one I have ever had was from an Italian restaurant in Hungary.
You should fry the garlic with the shallots. Put it in 30s after you started frying the shallots.
The wine helps contain the flavours as well. So you should add it even if you are making a tomato based risotto, which is naturally acidic.
You should almost never really add herbs at the start, they rarely handle heat that well. Add it like 5-3 minutes before you are done.
Don't be afraid to use to much oil. I can't remember ever seeing a person use such small amount of oil.
The parmesan is only there for the taste.
The butter will likely make it taste a bit better, but is optional.

The chance is low to vomit up razor blades. They will get stuck in your throat if you manage to swallow them. I wouldn't recommend to exit that way. Throat damage can cause you to vomit constantly. Been there. Needed hospital due to throat damage from hard bread.

You can’t use regular rice. Short-grain rice is genuinely not substitutable
you can't use reguler rice, use rice with a high starch content like Arborio, Baldo, and Carnaroli. Furthermore, when making Risotto you don't rinse the rice.
