    Ive skinned a lot and scalded some as well. Skinning is faster but you do loose some lard and skin if you use that. If in a hurry I skin them and get them broken down a lot faster. Nice work and Merry Christmas. Wishing you many Blessings!

    Great video! Does that boar hog taste different? I've always been told they have a strong taste. We have a couple hereford/old spot boars that haven't been used for breeding. Had them sold and then people backed out. Wasn't sure what to do with them. Can't get much out of them to sell them or trade them.

      Thanks! I haven’t noticed any difference, though I have heard of boar taint but maybe that’s just old boars.
      Dang I wish you weren’t so far away I’d buy one of those boars.

    Can you share your sausage recipe and technique? Like how many passes through the grinder? 🎄

      3lbs pork 30-40% fat
      1 TBS salt
      2 tsp sage
      2 tsp Garlic Powder
      I/2 tsp black pepper
      1/2 tsp cayenne
      We grind it twice with the finest plate

      Hi Roger, these are actually not wild pigs they’re an old fashioned “heritage breed”
      The meat tastes better but there’s a LOT more fat, which can be a good thing if you use a lot of lard, also the reason they’re not used commercially is because they grow much slower.
