    With regard to "burning" the curry, Indian cooking does something very similar, but it is called "blooming." It enhances the curry flavor and makes it easier to blend into the sauce. If you actually burn the curry, it gives a very bitter taste to the dish. I have learned from experience...the best teacher I am told. 😄

    Never understood people saying burning the curry prevents run belly when:
    1) You don’t “burn” the curry that’s already on the meat
    2) The meat is cooking for 2+ hours, trust me those spices in the curry powder are going to get cooked out in the cooking process, nobody is out here eating raw spices.

      EXACTLY. Burning curry only necessary for things that cook quick like shrimp where the curry doesn’t cook long enough.

      It's one of those things that has been repeated so much and passed down through generations that people just repeat it without questioning it - the reasoning may not make sense but the method works so no harm done in my opinion

      @@wendyc5217 oh yes no harm indeed. For me the only benefit would be flavour, I’ve tried it both ways and I think it only marginally improves the flavour so not much difference. I’m certainly not one to tell people how to cook their food anyway especially something so minor, am I the one eating it? No 😂 It’s just as you say one of those things that is passed down, that to me doesn’t make much sense. But indeed, no harm, love and let live.

    You must add irish potato and Masala to the curry goat, also carrot and scotch barnett pepper. To get the best taste.

    You could also add a few cuts of carrot and irish potato to simmer with the seasoning . Also, hold the handle of the pot to prevent it from spinning on the stove. Good warch!

      Great idea, I normally do add Irish. But not a big fan of carrots in curry. At that time in the video it was me holding the camera and stirring the pot. 😁

    Not bad . But not authentic country style. When you burning the curry, you must add garlic and ginger to the oil and curry at this point to create the ultimate flavor . Lot of people don't know this. Use green Scotchy to limit the heat. And no potatoes in curry goat. Don't where that come from.

      Any brand of seasonings can be used

      Use Goya Adobo with pimento. Use real garlic , ginger , onion and thyme. Don't use too much powdered seasoning

      There is a new one up now with the garlic. If you want it spicy you just have to add a bell pepper in the curry. Don't burst it just let it boil in the sauce

      @@ellemorgan5764 this is what you personally do and the video is what I personally do and how I could. This method I cook I have not got 1 complaint about the taste of the food I cook. You'll burn it if you don't maintain a medium heat yes. If you always cooking on high you will burn the curry. I don't constantly cook on high I turn it down.

    This is a vey poor recipe for curry goat. Not thought through properly and not authentic. There was no black pepper, no fresh garlic, no scotch bonnet pepper, no pimento and the piece of thyme looked like it was a year old. Never tell people to burn the curry - if you burn the curry it will make the curry bitter. You can fry it gently for a few seconds before adding the meat. You should have also suggested that the meat should marinate overnight in the refrigerator or for at least a couple of hours. Jamaicans dont cook curry straight after marinating like that. Not a recipe for people to follow.

      I cook my food so everyone can have it. You can change up the recipe to add the pepper to it. Never everyone can handle spice. And I've had no issues or complaints the way I do curry, just compliments

      Not everyone can eating spicy. I make my videos for everyone. If you want it spicy you add the pepper to the wet marinade. My wife doesn't eat spicy. It is authentic, I'm from Jamaica you add the spice while your eating it, you don't cook with it.
