Chicken chasseur is the ULTIMATE comfort food

  • Chicken chasseur is an old retro French classic that really doesn't need messing about with. Chasseur means 'hunter' in French, so it's also known as hunters chicken. Not to be confused with the BBQ sauce bacon thing that is also of the same name. Chicken chasseur is perfect right now, when basically the UK has entered a new ice age! it's cold, miserable and miserable cold!
    I used chicken thighs for my chasseur because they are cheap, tasty and are hard to over cook. You could also use a mixture of thighs, breast and legs, it's completely up to you. You can also serve this up with whatever you like. Mash, new potatoes, pasta even. Add some stemaed veggies to the table and you've got a cracking meal! Also, if you happened to have an unexpected guest for dinner, you can add a couple more chicken pieces, as the sauce will take it.
    To make my classic chicken chasseur you will need:
    ►4 large chicken thighs or 6 small ones
    ►4 rashers of smoked bacon (back or streaky is fine)
    ►125g of chestnut mushrooms
    ►150g of peeled and halved shallots
    ►3 garlic cloves
    ►2 bay leaves
    ►200ml of white wine (one you would drink!)
    ►350ml of chicken stock
    ►Half a can of chopped tomatoes (about 200g)
    ►1 tsp of dried or fresh tarragon
    ►1 tbsp of butter
    ►About 1+1/2 tbsp of plain all purpose flour
    ►Salt & pepper
    ►Oil for cooking
    ►Some chopped parsley for garnish (optional)

    hmmm...yet another nice recipe for chicken thighs...looks very nice..."pro" tipp for you Adam if you're not a fan of mushroom consistency: what we do is to add the mushrooms rather late into the dish...so not together with the bacon but maybe a minute before you added the liquids into the pan...that way they tend to keep their texture and don't turn into the "slugs" you dislike...another option is to chop the mushrooms up as fine as possible and add them from the start...this way they just become part of the sauce and you'll have full flavor, but no consistency...try it out...it works a charm ;)

    What if I do not want tomato products? My idea here is to cook 200-250g fine-diced bell peppers until they are soft and go with that instead of the tomatoes.
    What do you think?

    I have just watched you chicken chasseur video which I am going to have a go at today. Some time ago I made a comment about fish soup and you replied that you would do one but I cannot seem to see it in your list of videos. I have watched a lot of other cooks videos about but they all seem so expensive to make. Is there a cheap way of doing this

    Hi Adam. I had to laugh there...'it's good to talk, shut up!'. I have to defend your chilli con carne recipe. I love it, though I do vary the quantities of the hot stuff somewhat (adding more chilli in). I have some maturing in the fridge for dinner tonight. Next time I'll try using shin of beef like you used in your cottage pie recipe. All the best to you'n'puss.

    Nom nom that looks fab!! Why on earth would anybody just write YUK? OK so they might not like what you did but just say why, maybe it's the only word she could spell? I try not to put anything negative on someone's post, if I don't like something I just don't say anything (most of the time). I have to admit to commenting on a post the other day when the person had posted their dinner and it just looked horrendous, it was a slice of pizza with a hot dog bun on top filled with a banana and cranberry sauce, I mean WHY????     BTW, it's also very similar to another one of my favourite dishes, *Chicken Cacciatore,* which is the *Italian* version of Chicken Chasseur. ("Cacciatore" means "Hunter" in Italian). 🙂

    I like your use of two pans. The whole one pot thing is really misguided and often results in a burnt flavor in the sauce.

    That looks a lot easier than the recipe I used in the '70's. Haven't made it in years, but I think I will try this one. I have shelves full of canned tomatoes, and even if I only use half a jar, that's still using what I have on hand. I will probably use canned mushrooms, because, for some reason, all the fresh ones around here are soft and half mushy. Any thoughts on using fresh tarragon? Start with half the amount you used of dry?

    I really like Chasseur ❤ my biggest conundrum is I have recently developed a tomato allergy 😡 so have to leave them out . Any suggestions for an alternative ? I know I’m clutching at straws here 😮

    The Dutch are really serious about their mash. Might be worth looking into.

      Am Dutch and agree😃. One can make many varieties of the mash. For instance with a little less butter and milk (but always nutmeg!) + eggyolk added. Make rolls size of fingers, then bathe in more eggyolk and crumbs or (broken) corn-flakes, sesame seeds or whatever you like. Then fry SHORT IN HOT BUTTER before serving. Can be made a day or more ahead and kept frozen without coating. Some mix the mash with bacon or cover/insert a sausage.

    If you hate mushroom texture but want the flavour, make mushroom ketchup, its a mushroom stock concentrate

    Tarragon and chicken love each other and I made this with you in real time.
    My bacon was that hand made dry cure stuff and had virtually no fat on it and was very salty so I didn't chuck out the chicken fat.
    Do you use bargain basement tomatoes as mine was a lot redder than yours?
    Anyway Her indoors was mightily impressed and sends love and kisses.

      It's one of my fave herbs, goes well with fish and also pork too. And the tomatoes, for this type of recipe you can chuck in any old type of tomatoes. Glad you both liked it! Happy Christmas to you both

    No what you mean about mushrooms adam I saw a little trick of jamie oliver put the mushrooms in a pan with nothing in and roast them taste amazing a know you probably already know about that but it just change me about mushrooms it's the only way a can eat them now and the talking is the entertainment adam please dont stop cause of idiots probably carnt even cook Your Unbelievable kitchen Y.U.K which so many tasty recipes are made 👍keep up the great work adam cause we all love ya mate

    In my household we'd remove the stalks and peel the skin off mushrooms. Tedious and laborious but old habits die hard. I wash and eat the stalks now cut into rings but the skins get discarded...

    If you cook all the water out of the mushrooms an put a crisp on them it changes the texture..or you can chop them up really small so you don't notice them

    What do you mean, depriving your cat of mushrooms? My old cat Squeak loved mushroom skins; I couldn't leave mushrooms in veg rack or she would attack the bag & I had a mess in the morning. Mushrooms had to be kept in the fridge. I used to peel the mushrooms & give her the skin (she hated vegetables, unlike her sister who loved peas?) Anyway, Squeak lived to 20 and a half.

      @@Adam_Garratt mushrooms are not vegetables. Not sure if they are a cross between veg & meat l dont know of any other cats that like mushroom SKINS (not the flesh). Try peeling off a bit of skin and offering it to your lovely cat. I am interested to know the reaction.
