- Vendakka Mappas is a Kerala-style coconut milk-based Orka curry. It is a lightly spiced creamy side dish perfect for rice and Chapathi. Please try this recipe and let me know your feedback.
🍲 SERVES: 4 People
🧺 INGREDIENTS
Coconut Oil (വെളിച്ചെണ്ണ) - 3 + 1 Tablespoons
Okra / Lady’s Finger (വെണ്ടയ്ക്ക) - 10 Nos
Ginger (ഇഞ്ചി) - 1 Inch Piece (Chopped)
Garlic (വെളുത്തുള്ളി) - 6 Cloves (Chopped)
Green Chilli (പച്ചമുളക്) - 2 Nos
Curry Leaves (കറിവേപ്പില) - 1+1 Sprig
Onion (സവോള) - 1 No (125 gm)
Salt (ഉപ്പ്) - 1 Teaspoon
Tomato (തക്കാളി) - 1 No (Medium size)
Turmeric Powder (മഞ്ഞള്‍പൊടി) - ¼ Teaspoon
Coriander Powder (മല്ലിപ്പൊടി) - 3 Teaspoons
Chilli Powder (മുളകുപൊടി) - ½ Teaspoon
Garam Masala (ഗരം മസാല) - 1 Teaspoon
Thin Coconut Milk (കട്ടി കുറഞ്ഞ തേങ്ങാപ്പാൽ / രണ്ടാം പാൽ) - 1¼ Cup (300 ml)
Crushed Black Pepper (ചതച്ച കുരുമുളക്) - ½ Teaspoon
Thick Coconut Milk (കട്ടി കൂടിയ തേങ്ങാപ്പാൽ / ഒന്നാം പാൽ) - ½ Cup (125 ml)
Shallots (ചെറിയ ഉള്ളി) - 5 Nos (Sliced)

Have made this dish many times. It's nice to prepare it when ur fed up with non veg cuisines. Goes best with rice for me.

Hello Mr Shan I live in USA over 51years. When i was a child i always enjoyed cooking. I learned this from my mother. Basically all the Mappas is same ingredients. Okara Mappas sometimes i add omelet or boiled eggs. I enjoyed your recipe because the the time frame. Your presentation is wonderful because of your accuracy. Especially the measurement of the ingredients ,timing and temperature. Cooking is a talent and passion also patience. I remember i watched the cutlets and i said i make Fish cutlet Basically all same ingredients. I am very impressed to your method. Also i noticed your measuring means you explained to the measurement especially you are explaining tea spoons and table spoons. Cooking is a talent and passion. I hope our new generations followed.
