I love how you get informed about the places you visit and try to experience things as a local. I’m Chinese but even I can’t understand the totality of my country and all the different people and cultures that reside in such a vast country. I’m happy to see how open minded and compromised you are in your trips!

What I'm surprised about China is that many ancient buildings survivied. Many buildings stood here 3000 years ago. This is very rare in the West. Many ancient buildings in the West were churches and they were built, they were damaged in the war, they were rebuilt and they crumbled down and they were rebuilt all within only 300 years.

Liangpi is from wheat flower, but gluten washed out. They separate the protein part and starch part of wheat flower to get diversity of texture. Gluten part also comes back to liangpi dish as little chewy cubes.
As you are talking about needing to find PaoMo at 10:56, there are 2 big store signs in black just behind screaming Traditional Beef PaoMo and Traditional Lamb PaoMo? Even at 10:37 you see the sign in Red Lau Liu Jia, Traditional Lamb PaoMo?

HIS envoy Zhang Qian travelled to west asia and back to lay the foundation for the opening of trading routes, diplomatic n cultural exchanges btw east n west. Chinese invented goods like silk, tea, porcelain n noodles were brought to europe via the silk road.

Biang Biang noddles are not unique to muslim population. They're a type of noodles that people in Xi'an eat daily, in either Muslim or Han style. How the noodles are made is the same for the two styles. The difference is around toppings. Non-halal noodles are topped with pork whereas halal would use beef.
