A firm favourite down here in South Africa. Pepper crusted fillet (except we pronounce the 't'). We braai (pronounced 'bry' as in Bryan) ours. It seems pricing comparison is on par here and there. Crusted fillet on a Weber using indirect heat is phenomenal, especially with a chimichurri sauce. Magic stuff and done to perfection! Greets chaps.
Looks good but I prefer the reverse sear. If smoke is something I’m looking for I will smoke for about 30min at the lowest temp. Then sous vide at 135 for 2 hours. After that is where I would pick up in your video.

Incase you do not know , the beef tenderloin filet is actually filet mignon. Also called Center cut medallions for other animals backstrap/ tenderloin filet.
I have 4kg of beef eye fillet (tenderloin is what you call it) better get it out and cut some steaks off them was planning to do it over the holidays but got to busy..
I love the all the videos but I live in the middle of beef country in west Texas and beef tenderloin is around $35 a pound you can’t even find a ribeye for under $15 a pound
Ya, same here... it's nuts.. and there's plenty of supply.. just not enough labor to get them to market.. here, we have no supply issues.. but prices still are skyrocketing.. runaway inflation, hang on..
