    Those Biang Biang noodles at the restaurant were sooooo delicious 😋. Best of all it turns out that the simplified version we made at home is not only super tasty but actually quite achievable! As for my calligraphy skills, they clearly need a lot more work 🤔😂

      That Chinese word character doesn't exist. It is combination of different words into one, it is like writing "juiceofbigredapple".

    Blondie, the relationship you have your parents is incredibly special. Thank you for sharing these moments, and I do really hope you'll focus on food, food history, and ingredients more as you re-visit China. It ties those of us who are not in China to our roots and in many cases, teaches us more about ourselves than we learned from our own parents.

      @@BlondieinChina Standard way is to write the 之 part in the end, which holds the whole character. That way u can easily distribute all that space.

    A legend about the origin of biang: a poor student who failed at the highest imperial examination, fabricated the character for the biangbiang noodle to get out of a noodle bill; and he was singing a song he just created while writing, expressing his disappointment on his failure due to having no money and no relations with government officials.

    I’ve had biang biangs at Xi’An Cuisine in Chicago, they’re really good!
    I just learned how to write the character and didn’t find it too hard, but I do practice writing almost every day. If you look at the individual components instead of the whole thing, it’s less intimidating.

    Some tips about making biang biang noodles:
    1. if you coat the rolled doughs with a thin layer of oil (to prevent water losses) and let it rest in fridge for longer say one to two hours, they will be far easier to pull out. The science is that the longer you wait, the better the gluten is aligned inside the dough so that makes it easier to pull, also making the noodles more chewy and bouncy
    2. To maximize on the texture of the noodles you should have the water boiling by your side while you are pulling so that you could immediately dump it into boiling water after pulling.
    3. After boiling the noodles you could run it under cold water for a bit, it's a technique called 过凉水 that would make the texture even better. This technique works with all other noodles as well. It works because gluten would get more bouncy if you treat it with sudden temperature changes, so you can even swap it in hot and cold water repeatedly for better results.
    But nonetheless it's very cool to see you trying to make it at home! It's definitely a very decent first try. I used to make the rolled doughs, store them in fridge for a few days (normally they'll be good for around a week there) and pull it out when I'm feeling like some late night supper. It's really a very delicious and unique dish!

    Secret addition to the topping to take it to the next level: Chinese Black Vinegar aka "Chinkiang Vinegar" and no, balsamic vinegar is not a decent substitute. There is not substitute. Find it at your local Asian grocery.

    omg! your mum mentioned "same same"! its exactly how we again say it! usually when we wanna tone things down and being cute with expressions.
    another tip if you want more flavour, you can try adding "老干妈酱" if you can find a mart that sells them.

    I am really glad you made your own noddle. Its more like 油泼面 to me rather than biangbiang noddle because of the lack of the toppings. But they all taste delicious. Amazed by your noddle making technique lol

    you should try 西红柿鸡蛋 sauce with the noodle the trick is to saute the tomato with more than normal amount of sliced garlic

    Great video on your attempt to make the Biang Biang noodle. You are a natural! It would be even more authentic if you eat the noodle in a squatting down position because this filling noodle is mostly for the manual laborers who have to eat quickly and get back to work.

    I don’t have your skills with dough, but I can replicate the flavor profile by using supermarket dumplings and pour hot oil over spice. It’s my favorite way of serving dumplings. My mom doesn’t like chili, so I use a lot of white pepper and Sichuan pepper powder instead
