There is also a variation of Beehoon (Thick beehoon) crab that comes with soup (made with stock + evaporated milk + ginger) that is a must try Also, a little tip i have is that the "body" meat that connects to the flipper leg has the best texture and flavor. If you peel it right, it's like eating a crab "drumstick"
The reason you never heard of these dishes before is because you chose to to go Beijing for school. Beijing is in northern China, and it's really not the place for food varieties. Southern China is where all the food varieties are. Singapore, Malaysian Chinese food cultural is based on southern China.

I guess it has been around in the form of the sweeter dim sum 流沙包 ("molten lava bun" or whatever it's called). I think the best style of cooking crab via Cantonese style has to be salt & pepper style (some add garlic) aka "Chiu yim" in Cantonese. This style is good for most shellfish and I think you all should try. Another variation is milk butter aka Lai yao in Cantonese which is basically evaporated milk, butter! So the dish will taste milky and buttery. Also good with mantou
I really want to see you eat toast box! Singapore toast with thick butter and kaya jam dipped into runny eggs with black coffee! this video has made me really miss Singapore!
being a south east asian. We cook our everyday meals with all the 17 sauces on the menu. the sauces can be use to cook all types meat dishes, not limited to crab. We call those universal sauce :D it is wonderful if u have rice with it.

It’s not hit-in-your face taste like black pepper but yet fragrant pepper taste (it’s very nice as well) too! Welcome you to Singapore to try more Singaporean crab dishes and local delights!!
Great video! Glad you finally tried salted egg crab. As a side note, I'm Singaporean and none of these guys in your Singapore restaurant visits (including this) are remotely Singaporean. They have very strong China accents. So they may not exactly be the right people to ask questions about Singapore cuisine. They might just be hired help who were trained to cook those specific dishes and may not even have been to Singapore.
I think they are just Chinese natives that happen to work in a Singaporean restaurant, their accents are not Singaporean and they don’t speak Singlish 🤣🤣

China has a lot of Salted egg dishes and snacks, maybe you can another food adventure on that, salted egg tofu, salt egg fried pumpkin, 蛋黄酥 is the popular snack or you can call it dessert, it has a whole salted egg yolk inside.

IMO the ginger and scallion crab as well as the crab with vermicelli are far superior, they have a Chinese flavour infused into the dishes and are really really delectable. You guys should try those two dishes next time !
As a Malaysian, I prefer crab with creamy salted egg yolk. You can dip the "mantou" with the creamy sauce. Maybe you can try Malaysian food next time, the cuisine is majorly a combination of Malay, Chinese and Indian.

The reason you never heard of these dishes before is because you chose to to go Beijing for school. Beijing is in northern China, and it's really not the place for food varieties. Southern China is where all the food varieties are. Singapore, Malaysian Chinese food cultural is based on southern China.
It's just different. That doesn’t mean there are less food varieties in northern China.
