Servings - 5
INGREDIENTS
Water - 300 milliliters
Salt - 1/2 teaspoon
Green peas - 100 grams
Oil - 2 tablespoons
Cashew - 2 tablespoons
Garlic - 6 cloves
Onion - 120 grams
Green chili - 1 tablespoon
Tomato - 200 grams
Salt - 1 teaspoon
Water - 100 milliliters
Oil - 1 tablespoon
Cumin powder - 1/2 teaspoon
Cinnamon powder - 1/4 teaspoon
Red chili - 1/2 teaspoon
Garam masala - 1/2 teaspoon
Water - 150 milliliters
Tofu - 200 grams
Coriander - 2 tablespoons
Coriander - for garnishing
PREPARATION
1. In a pan, add 300 milliliters water, 1/2 teaspoon salt and give it a nice stir.
2. Now, add 100 grams green peas and cook for 3-4 minutes while stirring continuously.
3. Keep aside.
4. Heat 2 tablespoons oil in a wok, add 2 tablespoons cashew, 6 cloves garlic and mix it well.
5. Now, add 120 grams onion and cook until it turns translucent.
6. Then, add 1 tablespoon green chili and 200 grams tomato.
7. Sauté the tomatoes until it turns soft and pulpy.
8. Add 1 teaspoon salt and mix again.
9. Add 100 milliliters water and give it a nice stir.
10. Now, cover the pan with lid and cook for 5-7 minutes on moderate heat.
11. Remove the lid and stir again.
12. Transfer it in a blender and blend to make a smooth puree.
13. Keep aside.
14. Heat 1 tablespoon oil in a pan, add 1/2 teaspoon cumin powder, 1/4 teaspoon cinnamon powder, 1/2 teaspoon re
d chili and 1/2 teaspoon garam masala.
15. Mix all the spices well.
16. Now, add prepared puree and give it a nice stir.
17. Add 150 milliliters water and stir again.
18. Then, add 200 grams tofu, boiled green peas and mix well.
19. Add 2 tablespoons coriander and mix again.
20. Cook for 2-3 minutes on moderate heat.
21. Now, remove the pan from heat.
22. Add vegan tofu matar in a serving dish.
23. Garnish it with coriander.
24. Serve hot with chapati.
