I sometimes will use baguette bread for the bruschetta because it’s easier to toast and it makes a perfect little snack size! It also, because it’s a little smaller, doesn’t break apart as easy as other bread. Like you said though, if you toast it correctly, it won’t fall apart. ❤️
If I was casting a Lifetime movie about an Italian war bride, I would cast her as she has the English language skills, she has a strong Roman accent, she has the cooking skills to show her new American neighbors the best dishes from Italy(in the fictional American town, in the late 1940's). It would be perfect for her, with her cooking skills, explaining how pizza or bruschetta is made. I understand that for most of the U.S. after WW2, pizza and spaghetti were exotic foods. Chef Boyardee and Ragu were brands that gave the average American the ability to create Italian-style meals. How many times did we eat cans of ravioli and think it was good Italian food? This TH-cam channel saves our palates.

I really appreciate these longer videos. Still.. I love them all. Bruschetta is one of my favorite things.. So much so, that I did my research and came up with this amazing Bruschetta recipe about 2-3 years ago for my husband and myself. I'm not sure how traditional it is, but I started by sauteing rinsed canalini beans in rendered pancetta fat. I smashed them a tiny bit added salt to taste and a little olive oil. Piled it on the grilled garlic rubbed bread. Finally I topped it with the crisped pancetta, fried sage and balsamic drizzle, and olive oil. Uhhhh!!! The classic tomato bruschetta is a classic for a reason. It's still one of my favorites. But I prefer eating tomato bruschetta with fresh tomatoes, and tomatoes have a season. This canalini bruschetta is good all year. Playing with food and coming up with new ideas for recipes is my absolute favorite hobby.
You know what’s really good as well that leftover tomato juice and olive oil in that bowl! Add some balsamic to it and dunk your bread in it PERFECTION

I did so when I was visiting my grandma in the country back in 80-90s in Russia. We didn't call bruschetta. They had delicious bread, saucy big tomatoes and everything was extraordinary tasty. Believe it or not, but it was South Ural. There are severe winters (-30-40 C) and extremely hot summers (up to 40-45 degrees) summers. How I miss my kind and free soviet childhood😢

Question: Why put the tomatoes, basil and olive oil in the frig when toasting the bread. I find that the olive oil (even the high quality brand) will get hard and seize up and then you have to let sit out at room temp. Just wondering.
