  • In this video watch how Chef Pat Marone makes his Sunday Sauce Recipe.It's shows from start to finish how to make his Sunday Sauce. Steve Valahovic wrote the Theme Song "Let's Get Cooking" that the video opens with. He is also the singer and producer of the song. Steve also was the Director and Camera Man for this Video. Thanks Steve Great Job! A great time was had with his Golf Buddies as they help make The Meatballs! Then when sauce was ready the Rigatoni were boiled till aldente, and tossed in pan with Sunday Sauce Topped with Fresh Grated Pecorino Romano Cheese and served with the Meats that were Cooked in Sauce. Everybody really enjoyed themselves with great food, Wine and Laughs.

    1 Onion chopped
    7 Cloves Garlic Sliced
    4 35oz Peeled Italian Tomatoes
    Fresh Italian Parsley Chopped
    Fresh Basil
    Salt
    Pepper
    Crushed Red Pepper
    Sugar

    Loved the video. Reminded me of growing up and family dinners. My Nonna met my papaw during ww2 when he was in Sicily, married after the war and moved to Mississippi. You would be surprised how many Italians and Greeks immigrated to Mississippi. I lived with my Nonna and Papaw and she taught me how to cook and I loved helping her. We used to head to the Italian markets in New Orleans an hour or so away EVERY other weekend. Eating muffulettas, visiting family, and enjoying life. I will enjoy the memories of fresh pasta drying on the ironing board with a fan 😂, Sunday dinners after Church, helping her cook, and walks on the gulf coast beach after supper. Nonna taking me in and raising me was an absolute blessing. Thanks for bringing up some cherished memories. Wish I could go back in time.

    You think the guy is kidding when he says "The way you roll the meatballs makes the difference" is absolutely true. You must never squeeze them or pack them too tightly. It also helps to try to keep them roughly the same size., and not to dice the onions too fine. I've been making extremely popular meatballs for more than fifty years, and I use pretty much the exact same ingredients as Pat - but I only use San Marzano tomatoes. We too have the most fun forming the meatballs - I always preferred to do it with my kids and their friends when they were little. Always a great laugh and a bonding experience. Who would've thought that, huh?

    Oh my goodness !!! My mother made a sauce just like this. Pork adds flavor to the sauce like nothing else. She used pork chops, beef, and chicken, sometimes. Bravo !!! It looks amazing !!!

    the passion you have with cooking brings a tear to my eye - exactly how I am, my mother, grandmother, great grandmother, etc was - you don't see people with that nowadays nor take the time to cook like this for friends and family..so glad I was raised different!....wish you had a restaurant! dieing to try your sauce!     I grew up on 84th street and Bay Parkway... (Bensonhurst) I live in Florida now, I just couldn't handle the neighborhood change once Gotti got locked up... You three remind me of Wiffle ball, skully and the feasts on 18th avenue... fried dough, sausage onions and peppers... fuhgeddaboudit!

    Very nice video. This recipe is very good...although mine is a bit different in a few ways. If I was strictly keeping with this recipes ingredients and methods, heat, meat cuts etc...I would do just two things: 1. After his 3 hour cooking time I would have lowered the stove heat a bit and then cooked/concentrated the sauce/gravy down for another 1:15 minutes with no lid. 2. I would have added a small can of paste at that three hour point. The reason for these two additions would be to concetrate the flavors just a bit more and mostly to get a thicker sauce. Looking at the finished product in the video, to me, the tomato sauce was slightly thinner and runnier than I prefer over my pasta and in my mouth. Anyhow, very nice recipe brother, wonderful job.

    This is pretty much the exact way I make gravy...I do bake the meatballs as I make a large batch and freeze some. The short ribs work well. I always throw some anchovy paste and port wine in there too. Rigatoni is nice as spaghetti is a PITA to eat.

    I used to help my Mother make the meatballs and I'd eat them raw while we rolled them. and she'd always crack my hands with the wooden spoon!. Raw hamburg, I'm 77 and still here!. ciao!

    Great sauce Pat. My only criticism is puting the garlic in the pan before the onion. Onion needs more time to cook and carmelize. I always add onion first. Saute 3-4 minutes then add my garlic. Tuta La famiglia!

    Salve from an Italian girl...
    LOVE watching you prepare the quintessential perfect Sunday gravy, sauce or Sugo depending on region; it is a sight to behold. I CANNOT imagine a Sunday without it and you make it exactly like I do except for a minor variation of the meatballs where I use 1/2 cup shredded Italian loaf bread and soak it in a little cream/milk mixture along with my other ingredients before adding the meat and rolling...makes for a melt in your mouth meatball!
    Unbeatable flavor in these types of Italian meals and the kind that requires closing of the eyes during bites. I'm glad you're here to teach those who need to experience it! Thank you so much for sharing and making it entertaining and educational!

    They started putting carrots in the sauce during WWII. The sugar came from South America and they were neutral during the war so they couldn't export sugar to Europe. The Italians used carrots for the sweetener.

    This sauce is just like my grandmother made. She was from Sicily, and we never called it gravy. Great video!

    Looks real professional to me. I am not Italian but i did go to culinary school and although i don't work in the industry i am familiar with the practices and i regularly cook myself. I like the way you cooked everything in order. I never used pomodoro sauce in my meatballs. Interesting. The only difference is the tomatoes i use which are Valoroso, 6in1, or San Marzano. Everything else is on the money! Great job and fun narration between you and your Gumbas! Ciao!!

    what a beautiful home you have Pat. and that food looks pretty amazing too!! thanks very much for your recipe and fun watching you with your friends. You are truly blessed to have them and enjoy them.
    One thing though, I noticed that you did not use Oregano in the sauce/gravy or the meatballs. I have always used dried oregano in mine for years...it just adds something wonderful to the sauce. I also make stuffed peppers in the sauce. I love the flavor it gives to the sauce...you should maybe try it sometime.

      A famous chef in San Francisco told me years ago, "Oregano goes in pizza sauce, not for gravy or any spaghetti sauces." I've stuck to that for years. Most of the people I know that own good Italian restaurants say the same. Basil, garlic, onion, black pepper, salt, olive oil, red wine for meats (gravy), Pinot Grigio for all other tomato sauce, including Bolognaise style meat sauce. I "do" like oregano in meatballs sometimes though! :) Take care.
