In our family, eggplant dip is a synonym for baba ganoush, a popular Levantine dish made with roasted eggplant and served as a "meze," aka appetizer, on a platter with pita bread and other dips, falafel, and small dishes.
⭐️ Ingredients
2 medium (1.1 kilograms) eggplants (about 2½ pounds) (+ 1 tablespoon olive oil, ¼ teaspoon salt, ¼ pepper to season them before roasting)
3 tablespoons tahini (made with 100% hulled sesame seeds)
2 tablespoons lemon juice (freshly squeezed)
½ clove garlic (or more to taste)
½ teaspoon salt
2 tablespoons flat-leaf parsley (finely chopped)
1 tablespoon mint (optional, finely chopped)
1 tablespoon olive oil (to drizzle on top)

Tahini makes almost everthing tasty. I love eggplants grilled and then add tahini to it with some more seasoning
As an Arabic person from the levant region, this is called muttabal and baba ghanouj is the eggplant dip that has diced vegetables in it. It has been lost in translation in the west and with Arabs who went abroad, but the correct term for this type of eggplant dip is muttabal. They are two very different but equally delicious versions
in Egypt they do actually call this baba ganouj, they are an exception though.

The best is chushkopek. The easiest way to cook an eggplant.
Tip: Make vertical cuts in your egg plant and stuff them with cloves of garlic. Wrap the eggplant with foil and roast it over a low frame for 10-15 minutes, rotating it on all sides periodically.
Once you have removed it from the frame unwrap the egg plant and remove the skin of the eggplant a d then mash it along with the roasted garlic.
I usually use this technique which is less messy and allows the ingredients to emulsify. Add the mixture to a bowl, add yogurt, spices, lemon and Tahini.
It is called mutabal.. Baba Ganoush is different from it and is made of grilled eggplant and vegetables such as onions, tomatoes, peppers, parsley..etc

@@meenax7197 the South coast of NSW. I live rural so I would need to drive a few hours to go to a restaurant. I have been to some, just none around here. My closest town has 3 maccas and 3 Mexican restaurants though....

I am cooking some ducks that I raise and have some eggplant in my garden I need to use. So I am going to use this recipe along with some feta cheese and flat bread.
Salata de vinete for Romanians, and always cook it on charcoal. Dont use a blender, you need to chop it, ad some finely chopped onions and have it with fresh bread and ripped tomatoes. The taste of summer

In Egypt we add a chopped green pepper or two depending on the amount, it’s the original recipe. Onetime I added yoghurt too and it was amazing!

I love middle eastern food. Bihari baingan bharta is quite similar to this except it's chunkier and eggplant is roasted along with tomatoes, garlic, green chillies. Also garnished with coriander.

In india we have it in winter in a almost dimmed firewood smeared with oil we remove skin make pieces with knife mustard oil onion green chilli tomatoe and coriender green salt and some garlic and ginger pieces

In south India, oce the eggplant is pealed, we add it to tamaraing sauce, finely chopped onions and burnt green chillies, and finely choppped corriander and a little coarsley ground roasted sesame seeds.. and top it with sauted cumin, roasted garlic and red chillies.. its a staple dish here.. its watery tangy and yummy...

Although they close and the have the same base(eggplant).... But baba ganush contains a lot of vegetables like tomatoes....plus of course pomegranate molasses.

A thing that I learned over a decade or so of making baba ganoush is to take the flesh of charred/broiled/baked eggplant and put it in the colander with a bit of salt and let it sit there for an hour or a few. It draws unnecessary moisture that is ultimately ruining this dip
In Iran this food is kashk bademjon. Also it has union fried and hot hot mint

But I just make my baba ghanoush with a potato masher
In our locality, we call it Begun Pitika or even Begena Pitika.
You can also make a salad with it by mixing the boiled (or roasted) smashed eggplant with boiled (or roasted) smashed tomatoes, raw green chillies, red onion, (sometimes garlic paste), lemon juice, salt, mustard oil (or e.v olive oil), herbs like well chopped curry leaves, little bit of mint, chopped green onions and chopped corriander.

If you want To make it even more heavy and delicious, mix it with boiled smashed potatoes. And You can eat it with bread, cooked rice or chapati.

Tip - after roasting eggplant on stove, instead of scraping it , just immerse it in water, the skin will come off easily
