- Hi guys! With Mother's Day around the corner I wanted to share some easy recipes to create your own breakfast in bed for Mother's Day or really anytime you want to treat someone special or even yourself! I am showing you how to make the most delicious almond croissants stuffed with nutella and strawberries and roasted tomato that is stuffed with mozzarella and toped with an egg for the healthy part of breakfast!

Breakfast In Bed Recipes (serves 2-4):
Roasted Tomato Stuffed With Mozzarella And Egg
Ingredients
4 large tomato
4 eggs
1/3C shredded or diced mozzarella cheese
1T pesto
1T grated parmesan cheese
1T cream
salt and pepper to taste
olive oil to coat the tomato
Fresh basil for garnish
Directions: Preheat the oven to 400 degrees. Slice the top of tomato of and remove the insides (save the insides for pasta sauce or soup!) Mix mozzarella, pesto, parmesan and cream. Stuffed tomato with mixture. Bake for 15 minutes. Remove from oven and add an egg, sprinkle with pepper and parmesan cheese and bake for another 10-15 minutes depending on how soft your want your eggs.
Almond Croissants Stuffed With Nutella and Strawberries
Ingredients
4 day old large croissants
sliced almonds
Powdered sugar
nutella
sliced strawberries
Ingredients simple syrup:
C water
2T sugar
1t almond extract (you can use vanilla extract instead)
Ingredients for the Almond Paste
1 egg
1/4 cup sugar
1/2C almond almond flour
1/4t of salt
4T unsalted butter
lemon zest
Directions: Preheat oven to 400 degrees. Mix water, sugar and almond extract in a pan, bring up to a simmer until sugar dissolves and turn stove off to let it cool. Mix Almond paste ingredients. Dip the top of croissant in syrup (don't drench it just lightly dip) spread the almond paste on top and then stuff with nutella and strawberries. Bake for 10-15 minutes or until golden. Dust with powdered sugar and enjoy!
