@@chefhenrykitchen At the 13:24 point, you have the big bowl of dipping sauce, but what liquid did you use to get the leftover marinade to such a large amount of liquid? I know you need to boil it first to kill the germs from the raw pork or do you just make a whole new batch? Will doing both your pork and chicken as soon as the weather cools down a bit.
Not too sure what you are asking. All I can say to you is coal burns at a higher temp that wood and longer and you need high Temps to break down pork tissue and make it tender.
Just a few questions: I noticed your coals aren't completely white before you put the meat on. Do you suggest medium or high heat coals? How often are you turning the meat? How long into the cook before you starting dipping? Drooled during the whole video!!
I light the coals and wait till the fore dies down before putting the pork on. I just used regular coals not a specific kind. I turn and dip my pork each time. I put the pork on for 30 mins and than every 15 minutes I turn them, as I'm turning I'm dipping. Thanks for the comment and the support. Please share this video with your friends

I just moved out of Detroit go to K & F international market on 9 Mile right by Coolidge highway they have a bunch of Grace products which they use in Jamaica and just so many African and Caribbean seasonings and cool cuts of meat the meat's not the best price though I usually just go there for the seasonings. You can add scotch bonnet pepper into the wet marinade while blending for the spicy part. Real jerk chicken in Portland isn't spicy, we add spice to the chicken. Not everyone likes spicy so we make it for everyone
You don't need to tenderize meat if your slow cooking it over a charcoal BBQ. It will come out juicy and tender without beating the flavour out of the meant.

I use the same marinade sauce from the pork just add 1 cup of water and boiled it that the sauce
