Just love all Jamaican food I get excited about it. Most joints don't use high quality chicken spices etc make it at home and get excited about it. Soo good

Good day to you. I was just sent to your channel and Walkers Wood is really good. I do 50/50 Hot and Mild with a little BBQ sauce or ketchup for sweet. I know to each his own when it comes to BBQ, but Mesquite and Jerk don't mix (asking for trouble ... LOL). Try a milder wood like Alder, Pecan, or Apple. I throw in some Whole Allspice ad Bay leaves when I'm cooking ( first few hours) and spritz straight beer. My dry rub is Blue Mountain or Jamaican Choice. Nice to see they didn't Fall off the Bone too. People think they should for some reason. Much Success my Man!

Do you add a jerk sauce on top before eating?
I don't but you definitely could Jamilah, you could mix the Walkers Wood marinade with some ketchup or bbq sauce. I like my jerk with a sort of Escovitch onion sauce. Thanks for watching.

No better way to cook ribs than in a Drum Smoker IMHO... I use the warming oven on my LSG offset as drum smoker setup where I typically hang my ribs, hams, shoulders and whole birds. Delicious 😋

Question
I have a drum smoker too. I see on the rack below you put tin foil over that rack? What is the basis is it to block the flame or protect the meat ?
Great question MrIowa! It's a combo of the two. A drum brings such great flavor when those oils and juices vaporize on the hot coals, but the can run hot and burn your proteins. I cover a grate with foil to block heat and poke holes in it to allow juices to hit the coals.
@@mamaandpapajoe great idea. How big are your holes. Someone’s I noticed when I use my drum. The underside of my ribs get sort of dried out from the direct heat
They might be pea sized or so.
Wash and dry rub first. Then add the walkerswood last
The walkers wood is a great overnite marinade, the Grace dry is not. If it works for you, then by all means.
@@mamaandpapajoe clean with cider vinegar/lemon… dry.. add dry rub.. add wet jerk.. leave to marinate,.
