    It is so nice to see how respectful he is toward the food. He doesn't dump the potatoes into the pan, he places them. Same thing when he is plating. I've learned a subtle lesson today.

    I made this today and it was Ahhhhhmanzingggg. I couldn't find Mustard Oil so I used olive oil (sorry grandpa) but I ordered some mustard oil and cant wait to make this again with the "right" oil.

    This looks amazing! Can’t wait to make it although we’re a long way off new potato season here is Australia! Chetna, I wonder if you would consider adding some subtitles when there is discussion in Hindi (I’m presuming that that’s what you were speaking!)? I eventually worked out that haldi (spelling?) was turmeric but somethings I didn’t catch! Thanks for always putting out great content that’s both entertaining and informative and 100% reliable recipes!

    *_PAHADI ALU | Special Potato curry_*
    [You will need a wide, high-sided pan or "skillet" that has a cover]
    NB: TSP=teaspoon ... TBS=tablespoon
    _Ingredients_
    • 20 medium potatoes, peeled (or possibly unpeeled if unblemished or ‘new’)
    • 2 finely chopped onions
    • 4 garlic gloves
    • 1 inch peeled ginger root
    • 1-2 green chillis, to taste (NB: 2 chillis proved about right for Chetna!)
    • 2 TBS ghee
    • 4 cloves
    • 2 TSP coriander seeds
    • 2 TBS mustard oil
    • 1 TSP cumin
    • 1½ TSP turmeric
    • 1 black cardamom pod
    • 1 pinch asafoetida
    • 3 in cinnamon stick
    • 2 bay leaves
    • 1 TSP salt
    • 2 cups of water
    • 1 TSP sugar
    • ¾ TSP green mango powder (amchur)
    _Method_
    1. Prick the potatoes all over with a fork.
    2. Roughly smash together the garlic, ginger and chilli/s with a pestle and mortar.
    3. In the pan, heat the mustard oil until smoking hot.
    4. Reduce the heat and add the cumin, cardamom, cinnamon, cloves, bay leaves,
    coriander seeds, and a pinch of asafoetida.
    5. Fry 1 minute, add the smashed garlic mixture, and mix in.
    6. Mix in the onion and cook until light golden, about 4-5 minutes.
    7. Add the turmeric and salt.
    8. Stir, adding about 2 cups of water (just enough to cover the potatoes).
    9. Cover the pan and simmer for 20-40 minutes, until the potatoes are soft.
    10. Stir in the sugar and amchur powder.
    11. Cook 3 minutes more
    12. Serve with rice, flatbread, etc.

      You can add lemon at the end. Raw mango powder is sour so lemon is a good substitute.

    As a ph-aloo-sopher, this looks absolutely amazing and stunning, especially at 1am on a Sunday night (Monday wee hours). Just curious - did Haldwani the city that used to be under U.P. but is now considered to be in Uttarakhand? Either way, I will be having this with rajma and chawal good god can't wait to cook this !!!

      There are many recipes for this online that use cut up potatoes, which is what I would do cuz it's a lot easier. I think little fingerling potatoes will work really well for this too.

    If you Google the recipe name, you'll find many variations of this dish. Most use large potatoes that are cut up, which is what I'd do ... lots easier. Can't a lk ways find those little new potatoes. I'll bet fingerling potatoes would work well, too.
