    Curt your Spanish is so good! Someone commented that Snow was glowing & looking younger maybe that is not being in so much pain now? 😁 Enjoying more adventure now in the beautiful Amazon & the amazing Indigenous local people & their craft etc & where it is full of animal life!     Howdy! Let's see what you ate: The smashed plantain disks are "patacones." I never had it in Ecuador growing up, other than at my house. My mom learned about them while we were living in Panama. They are made with unripe plantains, you cut it into cylinders. You fry them for a little bit remove them from the pan, squash them, and put them back in the pan to finish frying. That's how you end up with the perfect circle in the middle. If one were to smash it before frying, the plantain would que completely smashed and shapeless.
    "Menestra" is a generic name for legumes. There is a restaurant in Quito that specializes in menestras.
    Guayusa is an herb from the Ecuadorian Amazon. I tried helping an Indigenous community to export theirs to the US, but they barely had any trees at the time. It's compared with coffee because of its stimulant effects. It's delicious. :) if I remember correctly, you can now find it canned.
    Cooking in banana leaves is common in many places in South America. Tamales are cooked in banana leaves, rather than corn husks like it's done in Mexico.
    I didn't see you having "quimbolito" in Quito. Maybe Cuenca? I'm not sure if it's a sierra thing or a Quito thing. It's a sweet cake steamed in banana leaves.
    A tip about banana/plantain. Bananas used to be called plantain, plátano. Plantain itself is known by its ripeness: verde for unripe, and maduro (mature) for ripe. The unripe is green, of course, and the ripe one is yellow. Patacones are made with green plantain.
    I've never seen cacao being ground that way. The traditional way is to do it on stone. The Aztecs would use a flat-ish base, and then run over it with a stone rod. I went to a factory near San Francisco, CA, and they crushed the cacao beans between 2 massive stones. The fat content is so high that it comes out liquid. It's not unlike nut butters. I was really surprised to see that they used that mill, and happy for the edumacation on the topic. Thanks!!

    Oh my goodness! As a chocolate lover, I was absolutely salivating watching that process. Always such a great opportunity to see "behind the scenes" and see how things are made. I had never thought about where cinnamon comes from - wonderful educational experience - thanks!

    Best chocolate I've ever had in the world was from a small village next to the Amazon -- wrapped in newspaper. I've never tasted any better.

    That chocolate looked amazing! A simple recipe, have the sugar cane guy cut the cane in sticks like thick skewers, put ground pork on it and BBQ or fry. Make extra and put in freezer.

    ...okay I finally found it on the map!!! I loved the spice origin adventure and the hand made chocolate and was drooling at the tasting! A lot of that countryside seemed familiar; quite a bit of Queensland rainforest resembles those areas - then again, so does much of Nigeria. I guess that's the tropics and thing. For all the familiarity, there is much difference and you are surely getting into the depths of that! Fabulous stuff. YAM xx

    Snow, don't know how you drove through that thick fog, I would have white knuckles for sure. So enjoyed this video, interesting story of the resort, Talapia Farm.     I miss you guys, I've watched from the beginning and now I'm all caught up and there's not enough LOL snow your hair looks great I'm 67 and still dye my hair but it's long down to the middle of my back and I've always wanted to go Gray but I refuse to be a skunk for a year, the way that you did it is the way to go if and that's if you have short hair. If I could afford someone to do it it would be easy until then I'm just going to keep on dying it I do not like my gray hair I look like a wicked witch haha blessings to you kids look forward to many more videos when you come to Hawaii you can park in my driveway aloha

    "The last time that happened was Costa Rica," as you drive over a sketchy bridge with holes in it. 🤣🤣🤣 Yeah, that sounds about right. We had an adventure of our own this past weekend and I would like to find some way to put the information on iOverlander about a certain road in CR that is NOT a road. Google Maps is very confused about that and sent us off-roading in our 14-meter bus. To whom it may concern: route 415 from Highway 32 to Guayabo is a motocross track. Not a road. We got out of there alive, but much damage to the bus. What a mess. LOL
    I love what you showed us about the village where women were the entrepreneurs. Love it! It's really gorgeous. Piranhas, though! YIKES. Yeah, I wouldn't have gone swimming, either. I would, however, have gone face-first into all that chocolate there at the end. I can't imagine being able to manufacture my own chocolate. I'd be diabetic in three months. YUM

    Roads are more than something that gets us where we need to be. I'm no engineer but working & living in Yellowstone opened my eyes to the magic roads, bridges and tunnels really are.

    Everytime I think you can't out do a precious video, you prove me wrong. Such beautiful places! But I'm with you Snow, I would not have gone swimming in that spot either! I live in grizzly country and deal with all the big wildlife around us, but anything in the water is just beyond my level of comfort. But it was a beautiful place for sure!

    Very interesting! Beautiful community of indigenous people, and I enjoyed seeing the plants we get our sweets & spices from! Seeing the finished chocolate product made my mouth water, lol!

    Need more info on your dental 🦷 process. I was watching a bunch of you guys videos. Got to the one of the surgery, hit a button and lost it. Please help..!! Going back through all the Amazonian videos looking for that one to get back on track. No luck soon far.. I’m in love with all the scenery. You guys have some awesome videos…

      If you click on our channel, there will be an option for playlists. For example, we have Fairwell USA, Mexico, Central America, Colombia and Ecuador playlists. If you click on the Colombia playlist it will show all Colombia videos in order. If you want to pick up after the surgery scroll down until you see titles live back in the van or in the road again.
