Two points, the Ajiaco doesn’t have Celery and is not sour cream, is heavy cream. As long you use homemade chicken soup is better 🇨🇴
Yes, you are correct. I used the classic trio of onions, celery, and carrots to make a homemade chicken stock. I used sour cream instead of heavy cream for aesthetic and to provide a little tang (like lime traditionally squeezed over soup). My goal was to expose my audience to this wonderful soup. The recipe looks great! But adobo and sazón aren’t sold in Paraguay. They season their meat mostly with salt, pepper, cumin, paprika, and garlic. Sometimes they also use a bit of nutmeg.

Looks lovely ! Watching lots of chilli con carne recipes like this, but noticed only few using tomatoes, neither do you, nor anyone using green and red peppers (capsicums), so is there a reason these ingredients are avoided? Thanks.
Chili Colorado traditionally does not use tomatoes, it gets its rich red color from dried chilies. However, when I make chili con carne, I do use crushed tomatoes.

Ruined it after squeezing nasty sweet ketchup over a dish that takes hard work and time to accomplish. I’m half Puerto Rican and half Chinese, and have had authentic Chinese and Puerto Rican food my whole life.. Never understood people who ruin good dishes by pouring ketchup over delicious food and ruining it. It’s like pouring A1 sauce over an expensive steak. Mind boggling

Full recipe will be up on Provecho (link in description) tomorrow, but here are the ingredients and measurements. 1 1/2 cup all-purpose flour 1 teaspoon baking soda 1/2 teaspoon Kosher salt 1/2 cup cocoa powder 2 teaspoons ground cinnamon 2 ounces Mexican chocolate 1 stick unsalted butter 1 cup firmly packed brown sugar 1 large egg 2 teaspoons vanilla extract 1/2 cup mini marshmallows (frozen) Bake at 350 for 12-15 minutes (rotating sheet tray half way between cooking)
