I dont think I will enjoy The Sims 5. Based on the trajectory of decisions and content in The Sims 4, I dont have a lot of faith in ever getting a lifesim from EA that will top Sims 2 😞

This is totally awesome! As you lean into modern, I tend to go retro styles and traditional builds. You can check out the apartments I build, they range from townhouses to separate houses on a hill lol
Building in Sims 2 is similar to Sims 3 to me with more options in Sims 3. I like Sims 1, 2 and 3, but if you want me to choose it's Sims 2 all the way.

I admit building in the sims 3 is very difficult especially with the laggy build mode. I perfer the sims 4 to build only buti love playing the sims 3.

Sorry if I don't answer your question I'm relying on Google translate. I'm assuming you're talking about the kitchen shelves! In order to do this 1) make sure your "moveobjects on" cheat is on and 2) to place multiple shelves on the same wall at different heights you will have to use the [ and ] keys on your keyboard. This is a functionality that comes with Apartment Life. Hope this helps!
I play Sims 3, but I am not a builder. I just keep the pre-made houses and play out the stories of the sims lives. Sims2 I might practice building.
I definitely recommend it! I love some good storytelling as well though
