This sounds like a great idea!
I have a shelter where my sim has her small business too and she lives upstairs of the business. She adopts dogs and cats and she sell this pets for sims that like having pets, but careful if a townie adopts one because after some days the pets returns to be stray again 🙁 that is something that happens in game, i remember that that happened and the dog was continually returning to the shelter like he was searching a place to live again 😕

The pet displays are notoriously difficult to work with, but there could be some decorative elements to get the effect you're thinking about.
As for modding/game dev, you'd also need graphic design, writing, and probably 3D modeling, at least if you'd wanna do it all yourself from scratch. I pretty much stick to recolors and object conversions since I don't have much background in 3D, but I know my way around Blender well enough to do little edits or resizing on occasion. I made a pair of earrings with a tutorial once but hoo boy I'm not familiar enough with the tools to make whatever I want.
That makes sense! I would be more than happy to achieve even a fraction of those skills lol! The Sims community is a game dev team all on its own
I would recommend obs for recording and devinci resolve for editing. I use them myself and they are both really good and free! Also Canva is really good for making thumbnails 😊
Also another amazing build. You seriously inspire me so much!! You are making me want to start building in the sims 2! Oh and your voice is so nice to listen too! I love these long videos. The longer the better i say! 😆
