- Today we will making a thick strawberry filling that is SO EASY to make and tastes much better than any pre-made filling that you would buy at the grocery store. It’s super simple to make!
STRAWBERRY FILLING
cup - 240ml
1tbsp - 15ml
1tsp - 5ml
16oz strawberries (you can use frozen if desire)
1/2 cup sugar for unsweet or 3/4 cup sugar for sweet filling
1/4 tbsp zest lemon (only the yellow part, don't use the white, or your filling can become bitter)
1/2 large lemon juice
2 tsp corn starch
1/2 cup cold water
1. Pour strawberry, sugar, lemon zest and juice into a medium size sauce pan. Bring to boil.
2. Cook on medium-low for 10-15 minutes until the strawberries have broken down. Use a silicone spoon or potato masher to mash the strawberries into a chunky consistency.
3. In a bowl, mix corn starch with water until completely dissolved. Mix at the strawberry sauce and low the heat. Once the filling has darkened and thickened up (about 2 to 3 min), transfer to a bowl and cover with film plastic touching the filling to prevent to dry. Refrigerate until cool down completely.
*The filling will last in the refrigerator for about a week.
After your cake, cheesecake or pie is filled, store it in the refrigerator. However, you can keep it out at room temperature for a few hours.
