    GREEK MEAT HIDE
    cup - 240ml
    tbsp - 15ml
    tsp - 5ml
    FIRST LAYER
    3 to 4 large potatoes, sliced ​​360g
    Oil for fry
    SECOND LAYER
    2 tbsps olive oil
    1 kg or 2.5lb ground beef
    1/2 tbsp dried thyme
    Salt to taste
    Black pepper to taste
    2 to 3 cloves of crushed garlic (1 tablespoon)
    2 cups of your favorite tomato sauce
    THIRD LAYER
    1/2 cup butter or margarine
    1 cup of flour
    1 liter or 4 1/4 cup of very cold milk (the colder the better
    to avoid clump in your sauce, it's another little secret!!!! Pour it all in at once and start mixing immediately)
    1/4 tsp nutmeg
    Salt to taste
    Black pepper to taste
    2 egg yolks
    2oz grated parmesan cheese
    FINISHING
    grated Parmesan cheese
    chopped fresh parsley

    1- Cook the wheat flour, stirring constantly for at least 2 minutes, over medium to low heat, so as not to leave the cheese sauce with a flour taste
    2- To prevent the sauce from clumping, pour in the very cold milk, all at once, and stir again immediately without stopping, over low heat. This way your sauce won't clump
    3- Don't forget to add 4 to 5 tbsp of cheese sauce to your meat sauce. Stir to incorporate it into your sauce.
    4- Bake in a preheated oven at 180C or 350F , until it starts to brown on top, approximately 30 to 45 minutes.
