I am surprised that a street vendor would use commercial/grocery store ramen, especially the "flavor packets". The common criticism of commercial ramen is the amount of sodium (salt). There is lot of sodium in a typical ramen flavor packet. Are vendors that use their own or commercial noodles but add their own flavoring ingredients not popular? I enjoy the series.
In Korea using commercially available seasonings is not frowned upon. It tastes good especially for the cheap price. It’s kind of like how American hotdog street venders use commercially available hotdogs and use commercially available mustard and ketchup. The ingredients are nothing special but for the cheap price, it’s publicly accepted.

It doesn't have to have a meat. The meat is just addition in the movie from the Nogshim company's recipe of Jjapaguri in their website. You can add whatever protein you'd like

The steak is just an addition from the movie so you can basically put any proteins you like. Edit: Jjapaguri has been shown in few korean variety shows before it blew up in Parasite. I just find it tastes like jajangmien mostly. Neoguri is not that spicy or has extreme taste. I usually eat Jin ramen though, spicy version not mild.
