    I pressure can bacon, also bacon bits, baked beans with bacon, white bean soup with bacon, greens with bacon, bacon jam, caramelized onions with bacon. So,you could can it up instead of putting it into the freezer.

    It's a " you get what you get" giving program.
    Kale can be dehydrated to powder and added as nutrients, and carrots are great grated and mixed in with onions and sauted into ground beef.
    I grind excess and freeze.

    Eggplant we love. I peel them and slice them. Then I bread them and fry till crunchy. My kids begged for them. Your breading should be seasoned to your taste.

    You could make some tasty bacon jerky in your dehydrator. I brush brown sugar dissolved in a bit of water on it for extra flavor. Mmmmmmm.

    So glad you gave out the 211 number because even in Central California we use the 211 number for local services. I use that number all the time and love telling folks to use that number when looking for local services.

    Stuffed jalapenos- slice peppers in half lengthwise,remove veins and seeds ( these as well as the stems, is where the heat is) Mix 1 pound roll of sausage, browned and drained, with 1 block cream cheese and 2 cups shredded cheddar. Stuff mixture into peppers and bake at 425 degrees until brown and bubbly. About 15 minutes.

    Fry eggplants like tomatoes, use eggplants in casserole with meat. I like to use eggplant with black beans, chicken and rice

    Eggplant.
    Slice it in 1/4 in slices. (I do round way) Sprinkle with salt. Layer in the biggest bowl you have. Put a dish on it and weigh it down with one of those #10 cans.
    After an hr, drain off that brownish water that comes out, and pat the slices dry.
    Ok. While you're getting the bitterness out of the eggplant, make the marinara sauce, and grate some parmesan.
    I fry the eggplant in a little oil in the bottom of a non-stick pan. I use olive oil.(I don't know how in a cast iron)
    Put a layer of sauce in the bottom of a 3 qt Corning ware or some dish like that. Drain the eggplant on paper towel after you fry. Layer the drained eggplant in the bowl with a layer of sauce, eggplant, cheese, sauce, eggplant, cheese like lasagna. You season each layer as you like. I don't put much salt, because the salt to drain off the bitter liquid is there, plus in the marinara. It's not a breaded eggplant. I descend from another part if Italy where we don't bread it. You can add fresh basil or flat leaf parsley on each layer, or in the marinara. We eat this cold, in sandwiches. I think everyone will love this.

      Salting and patting the eggplant dry is very important. The first time my dad made us eggplant lasagna, he didn't know to do that and it was very slimy. Someone told him that salting and patting trick, they said to treat it like beef steak, and the sliminess was gone.

    I make a ratatouille knock-off with eggplant.
    slice 1 onion, 1 bell peper mushrooms if you have
    cube zucchini, squash, eggplant (all or whatever you have) same size
    in big pot put bit of oil/fat add onion, bell pepper and mushrooms, cook til mushrooms release liquid
    add other veggies to pot
    add can of corn or frozen corn
    add can of crushed tomatoes
    season to taste with italian herbs and salt and pepper
    add 1 cup of broth/water - cook for 20 minutes - serve over rice or by itself and sprinkle cotija or parmesan cheese on top
    sounds more complicated than it is - just a veggie stew really.

    Sitting here watching you, seeing the plants you cut back, like I suggested, look amazing. Like you I also got a big haul of jars. I paid $100 for 36 dozen regular quart and pint jars and 15 quarts of almost quart moonshine (legal moonshine) jars. I really scored. I already had dozens of jelly jars. I don't can as much as I should, but I will probably never need to buy anymore! Love your channel. I get strength from you telling me it's OK to go to the food bank. I always thought it was for destitute folks until we lost the house we were living in, which caused my husband and I homeless. We live with family right now, but we live in one room. We are moving out in Feb so if we can't find a place we will need help at first and since I have been watching g you I'm not embarrassed to ask for help. Keeps on encouraging and empowering people!

    Slice the eggplant& put spaghetti sauce with ,or without meat olive oil,garlic & onion powder layer in pan parmesan cheese& bake 350 until done ck with fork. Also put provolone & mozzarella as well,few bread crumbs& yummy.

    I just discovered your channel and I love it. I volunteer at a soup kitchen that feeds a mid day meal 365 days a year and hands out kid meal packs each week and then extra bags of overflow items for those that have homes. ( our main clients are homeless). You have given me great ideas and I am thinking of starting a cooking class on how to stretch and prepare gifted foods etc…and you are giving me great ideas. I live in SC near NC.

    For anyone that cans, if you are able, you may want to start buying your lids and canning supplies now before the season starts . You never know if they will be in short supply. I don't can yet. I'd love to learn.

    I love that idea using egg carton to put bacon grease in. I use ice cube trays to put left over pizza sauce, crush pineapple, tomato sauce or any thing from a can in the freezer. One frozen l put in zip lock bag. Being it is just me l don't make a pizza every day or use crush pineapple. So this way l don't have to toss out. I just pull out what need of the frozen cubes.

    Mama Baird the cornflakes reminded me that many public school districts send home weekend bags of food/snacks to children or families in need.. I think it is so important that families in need reach out to their school districts. The backpack food program is a wonderful resource!

    That was a great score on the jars Carolina, they're sure to come in handy with all your canning. You got some good food this week. I like to simply thinly slice my eggplant, drizzle with olive oil, sprinkle with sea salt and roast in a hot oven... and eat as a snack, yum! If I have tahini on hand sometimes I turn them into Baba Ganoush (dip) which is tasty too.

    Considering all you do you'll probably put the freeze dryer to good work. But if you didn't have one, dehydrating canned vegetables can be a way to preserve canned vegetables that are getting older and reduce the space needed for cans compared to dehydrated vegetables. I have had good success with this. I'm using them in soups, stews, pot pie mixtures,etc.

    I was one of the last in the pantry line today and got 7 5 pound bags of carrots and almost 20 bunches of kale. A friend with the same family size got less than half of what i did (still an insane amount) because she was there sooner. I was shocked at the amount of food.
    My husband told me something similar today when I was doing my weekly "are you sure it's fine I go through the mobile pantry?" He reminded me it's not like we're stealing food from homeless or those who haven't eaten in days. What are they going to do if someone handed them a bag of carrots and a bunch of kale. That isn't food they can use.
    Same with your bacon. Some foods need to go to families who have the means to prep it.
    It also made me think maybe w could be the middle men and make some good with these items and hand them out?

      It would be great if folks with skills shared some of their home canning with neighbors who could use extra food. Also it could be fun to get together with some of those neighbors and work on canning/preserving together. Invite as many as can safely work in your kitchen, everyone brings what ingredients they have including containers and everyone goes home with stuff for their pantry or freezer. And some stronger relationships with their neighbors. We're all in this together. Might as well have some fun along the way.

    Jalapeños can be dehydrated or fried for the top of green bean casserole too in place of fried onion.

    I would also advise people to check out churches that give out food. I work Monday and Friday at one church 3 weeks a month and our food comes from the local markets. We have volunteers that go to the local markets and pick up mostly sell by dates are getting close or past. At that church we have a drive thru one Sat. a month where we do use the food bank as well usually have over 200 people pick up. Then I volunteer at another church that is open twice a month where they pick up from stores and use the food bank also. In the meantime I go to many other sponsored by churches picking up for seniors where I live.

    I'm so glad you were able to get a big chest freezer. It makes a big difference in what you can store(like ALL that bacon!) . I need to do a freezer cooking month like the pantry cooking. I'm bad at just stacking everything on top.

      I need to do some freezer meals too. I have lots of bacon, obviously haha, and some sausage patties and Canadian bacon, plus all those frozen English muffins. I need to make up some breakfast sandwiches for the freezer!

I think they’re super easy to reheat…and I got an air fryer recently, but haven’t tried it yet. Anyone know if it’s better at reheating things than the microwave? (I should probably try to actually cook something in it first, lol…it was a great deal at Costco and I’ve always wanted one.)

    You could make some baba ghanoush with that eggplant. It's like humus but with eggplant & it's delicious. I was very briefly married to an Israeli man & we lived in a community of Israeli people so this was one of the various dishes they introduced to me. It's eggplant, lemon, olive oil, tahini & some seasonings so very few ingredients for a fabulous dip or spread

    We love peach jalapeño jam, well the grown ups 😄, I will glaze it on grilled/sautéed chicken and porkchops, oh on a fresh baked buttery biscuit. It's so delicious, oh and stuffed jalapeños wrapped in bacon. 😋

    When i get some deer… i use bacon to mix with the ground venison. I also have used bacon and made sausage with it with venison.

    Our family doesn’t qualify for a food bank but I sure like to use my flash food app and look for clearance food that I can put in my food dehydrator or freezer...or jars lol. I love the inspiration I get here. And about that bacon, I’m so glad you get that. And look at you making use of it to feed your family. No shame in that.

      @@kellygarza867 its a program that a few different grocery stores here in Canada have where they post food at a steeply discounted price. Mostly stuff that’s about to “expire”...you go on the app and can see from stores in your area what is available. You check out online and then go pick it up as it suits you. The flash food app might be in the US or other countries too...I’m not sure.

    One large onion chopped fine and browned with one pound of ground meat. Pour into crockpot, add 5 cans of beans drained and rinsed. I use red kidney, cannellini, baby Lima beans, butter beans and one unprinted can of pork and beans. Add one generous cup of ketchup, one cup of brown sugar, two Tablespoons Worcestershire sauce, salt and pepper. Finally stir in two large cups of bacon ends. Cook on low for eight hours, stir randomly through the day.

    Well, I went to the closest food bank (with the price of gas and all) and I was told I could not be there because
    that is not the town I live in. They said I could have food this one time and I said thank you. You are not allowed entry but have to wait and take what they give you. we were given less than 2 pounds of protein. I did get one bag of beans. We were given a bag of shredded Brussel sprouts that were moldy, a bag of slimy salad mix, and a bag of carrots that were good. 6 bags of squashed bread. 1 loaf of cinnamon raisin bread that was good. 1 can of sliced peaches. one box of candy canes and a pound of flour and corn meal. We also got a pkg. of holiday sweet breads. I am grateful that we got some items we could use, and something to put in our compost pile. Will I go again? Probably not. More dried beans would have been appreciated. We gave it a shot.

    A tip you may want to consider with cooking bacon. Put some water into your skillet, it will evaporate as your bacon cooks down. That might work well with your frozen hunk of bacon 🥓 😋 😜

    Eggplant boats! Slice long ways in half, remove seeds. Make up your favorite meat loaf or stuffed pepper recipe and stuff the eggplant! Use the same baking time as your stuffed peppers, possibly adding a bit more bake time because the eggplants are bigger than your average sweet pepper. Put cheese on the top the last 5 minutes of baking. This will be soooo much yummier than you would imagine. Good luck, whatever you decide to make.

      @@mamabairds I haven't personally because they are pricey! They are so unique though that I can't wait to start collecting them. I especially love their logo... I love strawberry kitchenware. They seem pretty easy to use too. You can buy new seals on their website.

    You can slice(about 1”thick) eggplant bake on 350 degrees o a parchment paper lined baking sheet for about 25 minutes. Let cool completely, wrap with wax paper between slices (to prevent sticking) and freeze . Just pull out and thaw and use as desired. You can also purée it and freeze or can. I have never done that because we use it eggplant parmigiana, casseroles, and grill it.

    You’re so right about the jars. I’ve gotten so many from grandmas who can’t can anymore, or people moving to the city. Folks are usually pretty generous. You just have to look for it.

    I was going to buy the bag holders and I’m sure it works, but then I saw someone use a bowl and fold the top of the bag over the sides. It works brilliantly! Also… One of those things that’s so obvious, I have no idea why I didn’t connect those dots before. 😂

These are hard times for all of us.Believe me I know first hand, and if you can get help like this, then it's crazy not to take advantage of it.I might have already said this but I am 73 and my short term memory is not what it use to be.That bacon is an awesome .God bless.🙏🙏❤️

    Roasted or eggplant parm would be great. I wash and freeze jalapeños. I add one to my dry pinto beans when they cooking. Add flavor with out adding a lot of spice. You get some great items from your food pantry. Always grab the bacon. That is an added protein to dry beans, veggies and so many other meals.

    I love to use the decorative pint jars for mint jelly or pepper jelly. I don't know why but they just look pretty in those jars. I go to my Salvation Army food bank and one at a church, and both always give us canned peaches, so I've been making pies with them. Any kind of canned fruit is so dang expensive these days, so I'll take all that I can get.

    I’m so glad you mentioned getting away from aspartame. I was diagnosed with chronic migraines at 16, doctor suspected that it started at least 2 years before then but I didn’t realize, and now 12 years later I’m so sensitive to aspartame as a migraine trigger because I’ve had the condition so long that I took one swig of a drink that I didn’t know had aspartame and immediately knew something was wrong.
    On the plus side, the Crystal ice waters in the skinny bottles are aspartame free, as are a lot of flavored water options. The clear American brand you have to avoid the majority of those though which is unfortunate cause they’re so affordable.
    Love your videos and the inspiration to preserve and do more and be more creative after being in a rut for a while

      @@mamabairds so funny enough, Diet Pepsi is mostly aspartame free these days but there’s some aspartame ones floating around. It was one of those that the vending machine guy put in the machine that I’d got and didn’t check because Diet Pepsi is basically the only diet soda that has gone aspartame free.

      It's "rebel", but I cann bacon all the time. Don't raw pack it though, MUST be par-cooked, otherwise it turns to mush.

    I vacuum seal spaghetti sauce and stews all the time, it saves so much freezer space! I fold over the top of my vacuum seal bag and it makes it a lot easier to fill, plus keeps the top part of your bag that will be in your machine clean!

    Try eggplant parm-slice eggplant dredge in breadcrumbs & fry. Make pasta & sauce. Pour sauce over eggplant & pasta. It's YUM

    I use eggplant in veggie stir fry with soy sauce, sesame oil, garlic, ginger and samba and put it over rice. So good even my picker eater likes it because it’s mixed in with familiar veggies😊

    I saw a TH-camr Cooking with Pam I believe is her channel she gives so many tips. She has lots of shorts check her out. Anyways she cleans her bacon grease by straining it over & over again til it was just a white looking crisco if you will & she uses it as flavoring to making anything..& it's great way to flavor your food!! I personally only mk my bacon in the oven on a tray lined w foil for easy clean up.easy way to gather your 🥓 grease. For the Egg plant you could really make your family love it..look up EASY EGG PLANT IDEAS there's a ton..I eat Queso on my burgers. Omg you MUST try it! For the Turkey turn it upside down & rub it w butter on & under the skin. If you have Rosemary ir Thyme use that too. By doing it this way your breast meat stays moist. Also add either chicken broth or apple juice if you hv it. Cook at 350 F until temp reaches 180. Turning turkey over for about 30 minutes to brown top of skin. I add more butter on top just for added golden skin. Adding about a 1/2 cup of broth or apple juice to the pan as it's cooking. You can declare the pan & make a really good gravy!! Also when you're done w that meal take all the turkey off the bone & boil the carcass for some really great bone broth..you can add some of those carrots to the pot along w celery with salt & pepper..but literally it will be so delicious that you can use for many things. Lastly for your Jalapeños you can stuff them w just about anything just like a green pepper...oh & for an abundance of carrots if they're long carrots cut them in slices on a slant or if baby carrots just leave them whole..you can do Carrot Fries. Ree Drummond has a recipe & you can do shoestring carrots that you can put on your green bean casserole..& i just do glazed carrots which arent the healthiest but theyre good they are made w brown sugar. Some w honey. Or both..heck u can even use pancake syrup..but anyways you can make lots of muffins & carrot cake! .Sorry for such a long post..just wanted to cover it all ..great haul.
