I have to say you are so cute and thoughtful with your calculations for olive oil and potatoes, I will try your dish, I lived in Gaeta, Italy for 4 years and have been to Spain many times in many cities, so much fun. My mother was the same when I tried to peel a potato as a boy, I would cut too much skin and she would always say there will be no potato left when I am done, lol. I leave the skin on now and just wash really good, I love it on when making french fries, it adds a layer of crunchy goodness. Prayers and Blessings for your father, I never knew mine but always had my mother and Grandmother. I have tried all the myths about cutting onions and not crying and have found best thing is a very sharp knife so the onion is not mashed any and releases the chemicals into the air. Made me sad to see you cry. I Love raisins, it was our snack growing up and I think I have eaten millions of raisins. Once a month I have what my sister in law calls Trashed Potatoes she serves in her business, it is crispy fried potatoes, onions, green pepper, bacon or sausage cut into small pieces and cheddar cheese, it is so good.
