I couldn't believe how good they were. Using 1 1/2 C. of all purpose flour plus the dried fruits, walnuts and pecans, I was able to fill up 2 small aluminum foil loaf pans.

Also 100 gm candied pumpkin can be added with golden syrup or caramelized sugar syrup with brandy can be added. Also add cashew, almonds, walnuts. I make it the Sri Lankan style.

To answer your quest, you don’t need to add any more alcohol but I would recommend turning the bottle of fruits occasionally and placing it covered mouth side down. This will ensure that all the fruit get evenly soaked in the alcohol 😊
I have two 1-quart jars of soaked fruit that have been sitting in my pantry for about 2 years. It was going to be my first time trying to make black fruitcake but life got in the way and I haven't used it so far. It has been in the pantry all this time and has not been refrigerated. Would the mixture still be okay to use even if it wasn't refrigerated? Is it normally required to do so?

Hi Genica, wrap the cake in a plastic wrap and place in an airtight container. The cake will remain perfect for a month or so. If you want to preserve it for longer, place it in the refrigerator. It will stay well for even a year if refrigerated. Enjoy!

Hi Vanessa, 1/4 cup of marmalade is equal to 78.8 grams so you can round it off to 79 grams. Rum or Brandy is totally a question of preference. I personally prefer the fruity flavour of Cointreau 😊

Add a few tablespoons to any baked good you might be preparing. Great on ice cream, pancakes, waffles, oatmeal..whatever you fancy. Why just fruit cake?

Dates make the cake moist. You don’t need to sterilize the jar. The alcohol will do a good job of that😂

Use a mix of lemon and orange juice. Can also use some apple juice mixed it. We don’t need more booze. We already have enough alcoholic’s!❤❤❤❤

Cointreau is Cognac brandy. You can get it in a liquor store. If not available you can use brandy, rum or whisky

You could soak real fruit if you wanted but I would not use fresh fruits in a mixed fruit cake for Christmas
