Angel Flake Buttermilk Biscuits

  • We're bringing you a classic, buttery buttermilk biscuit- best when baked in cast iron! This was mama's recipe and a favorite of ours growing up!
    Angel Flake Buttermilk Biscuits
    makes about 20-25 biscuits
    2 1⁄2 cups buttermilk
    1 ( 1⁄4-ounce) package rapid-rise yeast
    3 tablespoons warm water
    4 tablespoons sugar
    3 teaspoons baking powder
    1 teaspoon baking soda
    1 teaspoon salt
    1⁄3 cup vegetable oil
    4 1⁄2 to 5 cups all-purpose flour
    1⁄2 to 1 stick butter, melted
    1. Lightly butter a 12-inch cast iron skillet or Dutch oven.
    2. Pour the buttermilk into a large bowl.
    3. In a small bowl or measuring cup, dissolve the yeast in the warm water with 2 tablespoons of the sugar and let set about 3-5 minutes. Mix the yeast mixture into the buttermilk. Whisk in the remaining 2 tablespoons of sugar.
    4. Whisk in the baking powder, baking soda, salt, and oil. Slowly stir in enough flour to form a soft dough that is no longer sticky.
    5. Turn the dough out onto a floured surface and roll out to about ½- inch thick. Cut out using a biscuit cutter. Gather up the scraps, roll out again, and cut.
    6. Pour the melted butter into the skillet or Dutch oven. Dip both sides of one dough round in the butter and fold in half, like a taco (you can also leave flat like a regular biscuit as seen in video). Place the biscuits in the baking pan or skillet close together and repeat with the remaining rounds.
    7. Cover and let rise in a warm place for about 40 minutes, or until nearly doubled in size.
    8. About 20 minutes before baking, preheat the oven to 350°F with a rack in the middle.
    9. Uncover the biscuits and bake for about 20 minutes, or until golden brown.
    10. Serve warm with butter, jam, honey, etc.
    Tip: These biscuits can also be made the night before and refrigerated.

    Made these when the recipe came out in Western Horseman. They will make you git down like a cow in the trailer! Potna, they are GREAT! Reminds me of my Granny's that she made 50+ years ago.

    There is no higher praise for a recipe than when your hound will take a second bite! Mine liked scrambled eggs and bacon, along with an angel biscuit, early on Saturday morning. The family members who arose at noon were told that cereal was in the cupboard!

    Biscuits look awesome. Add a pan of sausage gravy and we would be good to go, any morning. I'm sure Frank and the Beagle would enjoy some gravy with a biscuit. Just got your cookbook yesterday.     Spot on with the consistency. I thought it was on the wet feeling side, but they turned out perfectly. My wife, who grew up in Oklahoma, says this was exactly what she remembered her mom making when she was a young girl. After nearly eating ourselves into oblivion with Mama’s Meatballs with Mushroom Gravy, we shouldn’t have done this one in the same weekend. Lots of exercise on the horizon to pay for these excesses!

    These biscuits are wonderful! After trying the original recipe I made a batch with cheddar and garlic and a batch with extra sugar and some sugar sprinkled on top for strawberry shortcake! Both were fantastic! The recipe can also be cut in half but they warm up well also!

    my mother (now 93) makes a similar biscuit recipe but double stacks them, we've always called them double deckers. she folds her Sunday rolls as you described.

    Love this recipe. Since I live alone I like to butter all the biscuits hot out of the oven. Heavy butter bottom then flip it so both sides are buttered. Thank you. I've had some baaaad habits. Be blessed.

    I've commented on these several times, but they are still one of my favorites to make. I made a big batch tonight. There's no other biscuit quite like them. They're great fresh and hot, but they keep well in the fridge in a ziplock bag, you can use them for slider buns, or pouring SOS over, breakfast sandwiches, or on the side of any meat and gravy dish or garlic bread for pasta. Just slice cold leftover biscuits in half, griddle them in a little butter, and let your imagination do the rest.

    I made some of these yesterday (waited until my new field iron skillet was well seasoned) and man oh man, they sure are good. I'm no great baker, but I followed your instructions to the tee and they turned out great. I baked 'em in the oven at 350 as specified in the instructions. I live at 6,000 ft elevation, was a little concerned about that because sometimes things don't turn out right as they do down in the flatlands but they were perfect, no modifications needed. We ate them with butter and strawberry jam, and also dunked in turkey gravy. Either way they were delicious. Fluffy, airy, and nice crispiness to the crust. They have a lot of flavor of their own. My sincere thanks to Kent and Shannon for teaching rubes like me how to make great biscuits. I'll never eat store-bought biscuits again!

      I should add, when I made these the first time, I got flour all over the dang place. Looked like we'd had a snowstorm in the kitchen, and I'd been doing snow angels instead of angel flake biscuits. Shannon makes this looks easy and clean but that just shows how skilled she and her husband are. Whatever, it was fun and they turned out really good.

    I made these in the oven using a 10" & 12" skillet. Followed mom's way out of the cook book a folded them. gave the recipe a full stick of butter and they cooked up awesome. Chocolate sauce over these is heavenly and will make a nice dessert if your camping, 'I promise ya'. Great recipe!

    Me and the kids baked some of these in a reflector oven we made and they were pretty good, but when we cooked them in the dutch oven with all that butter, OH MAN was they better !! Folks you gotta try these. Get the cookbook !

    I am good at making hockey pucks, going to give this recipe a try. I have never tried baking powder biscuits with yeast but them looked like heaven. I wish I had a cute helper like yours. Thanks.

    Thanks. That was a great demo on how to work the dough without over kneading it. I've never seen a bread recipe that uses both baking powder and yeast. It's always been one or the other. I've made buttermilk biscuits in a dutch oven with coals using baking powder. Those are the best ever. There is something magic that happens with that buttermilk dough in a dutch oven.
