Pasta Carbonara Recipe (with the Whatever Pan) | Italian Recipe | Best Cookware

- Ingredients
• 100g pancetta
• 50g pecorino cheese
• 50g parmesan
• 3 large eggs yolks
• 350g spaghetti
• 50g unsalted butter
• Sea salt
• Freshly ground black pepper
Method
• Put a large saucepan of water on to boil.
• Finely chop the pancetta, finely grate the pecorino cheese and parmesan and mix them together.
• While the spaghetti is cooking, fry the pancetta. Drop unsalted butter into your Whatever Pan and, as soon as the butter has melted, tip in the pancetta.
• Leave to cook on a medium heat for about 5 minutes, stirring often, until the pancetta is golden and crisp.
• Keep the heat under the pancetta on low. When the pasta is ready, put it in the Whatever Pan with the pancetta. Don’t worry if a little water drops in the pan as well (you want this to happen) and don’t throw the pasta water away yet.
• Beat the 3 large egg yolks in a medium bowl and add the parmesan and pecorino cheese (keeping a small handful back for sprinkling over later).
• Take the pan of spaghetti and pancetta off the heat. Now quickly pour in the eggs and cheese. Using the tongs or a long fork, lift up the spaghetti so it mixes easily with the egg mixture, which thickens but doesn’t scramble, and everything is coated.
• Add extra pasta cooking water to keep it saucy (several tablespoons should do it). You don’t want it wet, just moist.
• Season with pepper and enjoy!

La ricetta va eseguita mentre la pasta cuoce quindi prendi una pasta che cuoce 10 minuti nel mentre cuoce la pasta devi mettere a cuocere la guancia per 5 minuti a fuoco medio senza olio o burro. Mentre cuoci tutto fai la crema con un uovo intero le altre solo il giallo poi metti il pecorino il pepe e lo metti sopra una pentola con un recipiente con acqua calda sotto e giri la crema senza che diventi solida ma cremosa fatto tutto nella padella della guancia unisci il tutto è servi a tavola

it's not the worst, pancetta is used instead of guanciale, which is possible, and butter shouldn't be there. But I've seen much worse (garlic, cream, peas, etc... This is not carbonara, but it could be worse. But it really annoys me that someone goes to the trouble of making a video and is not able to find out what ingredients belong in it.

Not bad recipe, but it could have been done better. I would leave the pasta to cook at the end and not cover it after draining it.
As long pasta is hot, continues to cook and from "al dente" will become a bit overcooked.
Honestly as much as it could still be improved I gotta say my expectations coming in were much lower than what the video actually was cuz he didn’t use any cream at least. These videos usually always got cream.

Panchetta is good but i would use guanciale and you dont cook it with butter please, the fat in the panchetta or guanciale is enough. Also i would stick to only Pecorino and if you want Parmesan then u can sprinkle on top after the dish is ready.

All these people saying this ain't write. This is how you make Italian Carbonara. Yes, Guanciale is better but not everywhere is that obtainable, so Pancetta is a the best alternative. The cream is made very well cuz there is no added cream like everyone here does. That is strictly forbidden. And the pepper is optional. This is good Carbonara

@@Lewis94444 guanciale, spaghetti, pepper, salt, water, egg, pecorino and very exceptionally olive oil. Nothing more or nothing less belongs to real spaghetti carbonara. I personally do not use olive oil, I have enough oil from guanciale
