    In the USA we cut the tops off the peppers so they stand up right and fill with ground beef and rice mixture and bake until peppers are soft. Pre cook the ground beef first. Almost like a stuffed cabbage recipe but in peppers.

      My mom used to add frozen mixed vegs (peas, carrots and corn) to the mixture. Added some veg nutrition and color. I didn’t like them. The peppers were 🤢! Even the filling had the taste of the pepper. My mom would put some filling into a container. I was PICKY! My poor mom! 😘

      I add the Mexican rice box mix and top the peppers with cheese. It melts in the oven and is so tasty

    Made these for dinner tonight! I used seasoned breadcrumbs for both. After frying the eggplant I topped with marinara sauce and shredded mozzarella and popped them in the oven for a few minutes. After the peppers were done, I topped with a mixture of white cheddar and mozzarella cheese and put under the broiler for a few minutes. So good! Only thing I'll change next time is I will add some parmesean cheese to the stuffing mixture. These are both going to be regulars in my meal rotation. Thank you!!

    We actually make a version of these pretty often lol. Much easier to make the stuffed peppers/capsicum by cutting the top off and filling them like cups. They don't fall apart as much that way. We fill ours with black beans, quinoa, corn, onions, and tomatoes.

    I’ve learned something this evening. I’ve never heard red peppers called capsicums before. I knew they contained capsicum. I love how vegetables are called by different names around the world. I also learned that aluminum foil in Australia is called “alfoil”. I love it!!

      They are called paprika's in my part of the world. ;) and eggplant is called auxbergine.

      For us in Québec, it's " poivrons" for the capsucum and " aubergine" for the eggplant

      ​@@cak8132 The spice is called specific paprika powder and it is made form long poited ones, that are dried or roasted. It is a different variety but from the same family.

      I have a few and some regional vintage cookbooks, another has old recipes from Nova Scotia (where I'm from). When I'm homesick I give it a look... Food doesn't taste the same as home no matter where you go I think. I could follow them to perfection and something is still off. My mom even struggled when she still lived in the US... She was sure it was the water 🤣

    The stuffed peppers are also good with a little cheddar melted on top. Ive made the fried eggplant but I never saw the recipe in that cookbook. (I used to own that cookbook) Interesting. The eggplant dish was my 90 something mothers favorite dish. She sprinkled parmesan on them while they were hot so it would melt a little. Never cared for eggplant until I had them this way. Yum! Thanks for another great trip down memory lane. My mom passed last April so it was sweet.

    VERY WELL DONE!
    I must tell you ... if you want to do the eggplant again..... Soak in a heavy salted cold water bath a couple of times and then drain and pat dry. It takes out the bitterness and the thick droplets that come out of the slices when slicing. Then dredge and bread to make an amazing breaded eggplant steaks. Yes.. Yummy! Works for Zucchini/yello squash too. YUMM You can even grill after the salt bath.... It's delicious.
    I can't wait to try these dishes. They look amazing. I Love vegetable foods.

    So interesting how different recipes can be! We stuff our peppers with a meat and bread stuffing (old family recipe) no water in the baking dish.
    Eggplant we use Italian bread crumbs and add parmigiana cheese and we always peel the eggplant first. Love your videos all the same.

    FYI guys! I try not to overcook my peppers, and I know she was following a recipe (no judgment!) but my sense is the pepper, err capsicum, would be soggy if anyone followed this exact recipe. I like my veggies with some bite left so I do this with no preboiling. Pop then in a scorching oven with no water. Roasting them before is rad too! They really sweeten up. Noms!

    Im an Aussie and have done both ways with Mince standing up and this version . It is great that we share our recipes . I love the Idea of water in the base that is something I never did and it worked. Thankyou Sage. Please keep the Recipes coming I love them. You are a Treasure. Thankyou

    You can add grated cheddar cheese on top of your stuffed peppers at the last 5 minutes of baking which makes it easier to eat as the melted cheese holds filling together! I love watching these cooking videos as they are all things my mom cooked for our family when we were growing up. I have her cookbook now. 😁

    I love a eggplant parmesan but a little secret is salt the eggplant and let it sweat out the extra water for about an hour then do flour, egg wash, bread crumbs. It will come out amazing. Plus while it's still nice and hot sprinkle Parmesan cheese. That's how my Italian grandmother has done it.🤗🇮🇹😘

    this is a lovely video, I will copy the peppers recipe, I learnt long ago that if you salt the eggplant a bit before to cook them and after salted them you removed the salt with a paper, it prevents the bitter test that sometimes they can get.

    I love fried eggplant I grew up eating it, the recipe I have came from my grandparents passed down to my dad then now I make them. The only thing is we made them a little differently, we peel them, then dip them in milk, then seasoned flour (salt & pepper), and then fry them and serve them with ketchup or a little salt sprinkled over it. Also if you cut the eggplant really thin, when its done frying its kind of like a chip or crisp. So Good!

    I fried eggplant deep frying with no flour, im eating it with sambal belacan (chilli with shrimp paste) and also a warm rice.. i love it 💛

    My Mom had that exact cookbook and we made the fried eggplant using that recipe! It was one of our favorite meals while growing up in the fifties and sixties. Never had stuffed peppers made like that but it looks delicious. I will need to try it and make me some fried eggplant too.

    Oh my goodness, did you burn your hand? These recipes look fantastic! These are not the stuffed peppers of my childhood(ground beef, rice, and canned tomato soup).     We cut the tops off almost like a cup and fill them with an already cooked Spanish style rice with tomato sauce and mince. Then wrap them in foil and bake until they're soft. We always sprinkle some shredded cheese. We also do a philly steak version. So yum 🤤

    I love seeing your smiley face on a thumbnail waiting in my Watch Later, makes my day!
    I know it might not have been in the recipe, but a good tip for eggplant is to sprinkle the cut sides with salt and leave them for a bit (like whilst stuffing some yummy capsicums!) This pulls out some of the moisture in the eggplant and makes them less bitter. I've made a lot of moussaka in my life and can attest that it helps.

    I do my stuffed peppers with rice, well seasoned ground turkey, tomatoes and tomato sauce and lots of garlic and cheese (blue cheese goes great with turkey) . I like the idea of adding corn! Yours looks delicious!

    Love this series so much! I have the stuffed capsicum in the oven currently, I did add ground beef and use cracker crumbs as I was out of bread crumbs. I plan to top with cheese when done and bake a bit longer till bubbly hoping the cheese convinces my most picky child.

    Love these videos. I am in the US and my grandma (who was a real housewife during these times) would stuff the peppers with ground beef, rice and tomato sauce. The eggplant is spot on but we always peeled the eggplant..

    I don't know if you're still reading comments, but you can place a wet cloth underneath your cutting board and it will not slip or move around. It works fabulously! It helps prevent accidents.

    Oh that looks delicious. I love fried eggplant . My mom did stuffed peppers in the oven as well, sometimes with a beef mixture, sometimes with a rice mixture, both were delicious.     Wow pre-crushed Kellogg's Corn Flakes?! I've never seen them here in the US. My mom always had to just put some of the cereal in a ziplock bag and use a rolling pin to crush them 😂

      That should be very easy and it will work absolutely fine without egg! ;)
      Also, I love black or kidney beans in my capsicum stuffing!

      Aquafaba, the liquid from canned chickpeas works great!
