  • Hello, my name is Alina, I live in Ukraine and I want to introduce you to real Ukrainian cuisine. Today I prepared cabbage rolls for the whole family. Each hostess prepares this delicious dish in her own way, but I believe that this is the most delicious recipe for cabbage rolls:
    Ingredients for Golubtsi:
    - cabbage
    - rice
    - minced meat
    - onion
    - carrots
    - tomato paste
    - homemade sour cream
    - garlic
    - oil for frying

    Polish, German, Ukrainian and could eat cabbage rolls 4 times a week. When I was a little dude my grandma made them with potato pancakes that were freshly grated and formed into little happy cakes. I think I'll make me some this coming weekend.       Czech national food is "Knedlo, vepřo, zelo", which translates into "dumplings, pork, cabbage". I think most of Central EU countries might be familiar to this simple and yet so good of a recipe

    This was an extremely pure video to watch. I've cooked professionally for many years, but this is something else entirely. So peaceful to cook out in the snow, bundled up with some furry friends. The cast iron cookware you are using looks amazing. As do the cabbage rolls!

    Wow such a nostalgic and relaxing vid. Being Slovakian in heritage, this is a recipe that my grandpa would prepare for us I just don’t recall the amount of cream being used but otherwise almost exact recipe! Yum! She’s adorable too

    Hey there Alina! This reminds me of home cooking I grew up with. I'm from the Former Yugoslavia and across the country we have a similar version of this dish. Each state and region has their own take on cabbage rolls and even each family has their own take on it. The version I grew up with was cooked with sauerkraut leaves and was more heavy on the pork (or beef or the combination of) mince. For the fancier version, cured, smoked and dried pork would be added to the pot with the cabbage rolls. Sometimes shredded sauerkraut would be spread around them too. My mum preferred to use sweet Hungarian paprika instead of tomato but I've seen some recipes that include a bit of tomato paste in the meat and rice mix. It would be served with either mashed potatoes or corn bread.

      We never used tomato in ours. Just onion, carrot, celery in with rice/meat (ground pork, but could have beef mixed in. If it was for me, then caraway, but others didn't care for it, so had parsley & thyme. Layered in big pot with sauerkraut & additional chopped cabbage (the broken leaves). Water & apple juice added. Cooked till tender. Serve with mashed potatoes.

    Looked awesome! My Grandmother was from Slovakia, pretty similar recipe. Whenever I make them, I think I made too many. Only to find out I should have made more! Sneaking some for breakfast and some after midnight :) They go so fast!

    my family is from hungary and croatia, the huns always made cabbage rolls with lots of paprika, no tomato, and layered the rolls with kraut. the croats made them very similar to this recipe except for the carrots. both used lots of garlic. both ways were very delicious.

      I'm Hungarian and I agree . Looks interesting how close areas are and foods are so different. I love cabbage rolls and I make them up a n freeze raw and get out what I need for a dinner. It's awesome because I make so much I can also give some to my dad.

    For me, I just witnessed the greatest meal ever cooked on TH-cam! I have been cooking this for 40 years and just learned some new tricks and twists. It seems every society in the World has a version of this or stuffed grape leaves. If I was on death row with one more meal to eat I would want yours!

    Amazing how common cabbage rolls are across cultures. My grandmother was would make Kohlrouladen, which are very similar, and one of my favorite restaurants is Lebanese and they have their own take on it. The only major difference is different spices and no tomato sauce.

      Yeah, my mother did the same. She's been gone a long time now and there are a lot of things she made that I never learned the recipe for. Kohrouladen was one them. My father and I used fight over who got the last bit of herring salad.

      Beautiful place, cabbage rolls look so good. My Mom asked if we would like cabbage rolls one time. Never having them before, her five children said, Ick! Then she made them. Were we wrong. She always made alot but they never lasted long. ♥️👍♥️

      These aren't traditional recipes though. Ukrainians did not grow rice in any significant quantity until the 20th century. Rice has only been widely available in Ukraine since 1.5 generations ago. So, basically, your Grandma maybe made it with rice, but her mom probably did not.

      @@VidarrKerrActually you are wrong. This is a traditional food in multiple countries in the area (Balkans, Romania and so on) not just Ukraine and is always made with rice and cabbage. In Romania we do it with sour cabbage - you can look on internet, it slightly differs from country to country.

      Yeap, but you jumped Romania who gathered them all recipes in the middle, and yet makes it like this and in 100 more ways. In Romania the cabbage used for this is usually pickled, as It gives better taste and is easier to manipulate. Larger cabbages are better since the leaves are bigger and thinner at the edge, and it is the thinner leave that is usually used.

    Using that Brick Oven alone has to make anything taste way better than other cooking methods, especially stuffed cabbage, or what we call golabki (that's what my grandma was taught to call them). Best Dish in the World! Everyone cooks them a little different here & there but u can never deny how Awesome they are! 🙂❤️

      Very true Julie. And they were always cooked with love and it showed in the eating. Mom also called them Golabki(cannot add the punctuation needed) but verbally pronounced Gowombki. All Eastern and Central European countries have their own versions but ALL are a delight to eat, very filling and extremely tasty.

      Yes, natural food not canned/packaged muck. When we were young we laughed when we first saw commercial dog/cat food and would not dare feed it to our beloved pets.

      As a child I was horrified by "dog food." I absolutely was truly horrified people would put that disgusting, hard, stinky, dirty stuff in a dirty bowl for their dogs. My grandfather had l little tiny 'house' on the farm where every morning at 4 he would take last night's leftovers in a little pail, let me get the eggs & feed the chickens, and he would cook fresh eggs and make pancakes he called dog bread with the leftovers and cook up other odds and ends from the freezer - leftover parts after butchering a hog or beef bone marrow - in big cast iron skillets - and he fed his loyal pack the way he loved them. (And they would have given their lives for their master.) That's how I grew up with dogs (and animals in general). I feed mine the same way Pepa did. I don't feed them anything I wouldn't eat, but of course don't feed them 'everything' I 'would' eat. In that respect they eat Better than I do 🙂 They don't eat sugar or anything bad for them - Can't say that for myself 😄

      @@gidget101 Well said Gidget. Fancy feeding your dog commercially made muck relying on manufacturers to be truthful with the contents. Like you we fed our pets real food that we made and ate ourselves.
      Of course some things we can eat cats/dogs may not be able to so they were excluded, but otherwise they ate what we ate. No canned muck or pretend food out of a box.
      And people do not seem to realise it is what kills their pets and gives them similar illnesses we get when we eat processed foods too much.
      Fresh, natural foods is what man and beast is meant to eat not this convenience muck they call food.

      Yes. We call them halupki. We don't use mayonnaise which looks like what this lady uses. We start with a roux, add tomato juice and tomato soup along with chicken broth, spices and a little sugar if it is too sour.

    The traditional Romanian stuffed cabbage recipe is very similar to this. Stuffed cabbage rolls are cooked all over Eastern Europe.

      You can call it Sarma, the turkish do know that as well, but they use fermented kraut, not these fresh one, like the germans to....

    Very interesting! We also have our own traditional dishes and we have one very similar to this. Its cabbage wrapped exactly the same but its steamed with the filling inside. The filling is usually pork(can sub for chicken, beef, or shrimp), minced carrots, minced wood ear mushroom, vermicelli noodles (aka clear/glass noodles), garlic, onion, egg(s), and cilantro. Our has a South East Asian influence! Its cool to see similarities between different cultures!

    Just a little tip I learned, if you freeze your heads of cabbage for a couple of weeks, that will eleminate the need to boil them. The leaves become very tender and plyable plus you are not losing any of the vitamins. Just make sure you give the cabbage enough time to thaw! Loved watching you make them!!

      @@bkm2797 Actually I place them in the sink for quite a while while they drain. If you try this, please let me know what your thoughts are. I myself won't make them any other way. it saves so much time.

      Thanks, so it's straight from the freezer to the sink and not the counter where it may release a good deal of moisture...good idea. It may be awhile before I give this a try, but I always appreciate learning good ideas in how yo do something better. Thank you!

    Amazing how a simple old world dish like cabbage rolls is such a favorite. My grandmother made them when I was a kid and it was a favorite to me. So much so that It's what I always requested them on my birthday. I tend to make a tex-mex spin on them using ground beef and mexican seasoning and all the hot sauce you can handle. They are really good. Love the video, Slava Ukraine!

    My husband's mom was from the Ukraine was from the Ukraine and she used to make cabbage rolls and potato pancakes together and I just want to make that both together again it's so good just really really great and this is so nice the way that she's doing this video is so calming very calming

    We call that "sarma" in Bulgaria. We have 2 types - cabbage and a grape leaf ones. For the cabbage ones we usually use sour cabbage as it is widely available in the winter. For the orher type we use greap leafs and the rolls become smaller. I do not know if the fillings have some differences.

      It’s Turkish word wrapping it’s Sarma for cabbage rolls we called “ Lahana Sarmasi”

    I just discovered your channel. The title caught my eye. Cabbage rolls! I grew up in Canada. My Mom used to make them when I was a kid. I just didn't like the cooked cabbage back then. But now? As an adult? I absolutely love cabbage rolls! I am pretty sure my Mom used to make them the way that you just did. Our community in Canada had a lot of Polish and Ukranian immigrants.     Alina. My heritage is Austro-Hungarian, we make our family recipe often. Our recipe and cooking technique is very similar. For the stuffing we use 1/3 cooked rice, 1/3 ground beef and 1/3 pork sausage. Then roll the leaves and simmer in a big pot. After they are cooked we put lots of sautéed butter and onions over the top. So a little simpler but very delicious!

    My mother used to make that. I love the taste. I made it myself one time. It tasted fantastic but it was too much work for me. I make a deconstructed version where the meat and rice are made into meatballs and the cabbage and carrots are shredded and it’s all cooked in a tomato broth sauce.

    Noo Alinka tymi gołąbkami, to mogła byś podbić świat :). Wiele razy jadłem, moja Mama robi, ale ten przepis jest dla mnie odkryciem - oczywiście gotowanie na ogniu dodaje, że tak powiem SMAKU :). W sumie zwierzyna się zleciała i jako główny skład JURY - dają pewnie 11 na 10:)
    do tego ta swojska śmietana...
    Piękne nowe miejsca, zima (choć nie tak radosna jak powinna być) -- czy jesteś bezpieczna tam gdzie przebywasz?
    ps. pod ostatnim filmem wspominałem o gołąbkach a tu patrzę tytuł i GOLUBTSI - może przypadek:)
