I love these and have eaten countless numbers of them while in China. I sure miss some of the real Chinese dishes. Most Chinese in the USA is south China type cooking, all sweet. I prefer Sichuan or Hunan style. I also like hot pot, the spicy side! Can’t stand stinky tofu, I’ve tried it many times.
It's actually pickled. It gets its color from the ash used in the pickling process. It gets its name because it's preserved for 100 days. Hope that helped.
