Great job but I’m sure you’d like to do it right.
I think raspberries are delicate & tend to spoil quickly, I wouldn’t use them unless just before plating. I suggest either add sweetener to the “strong” coffee before drenching the lady fingers, &/or sweeten the whipped cream.
I was thinking the same thing. Nothing about this screams dessert. Sour raspberries and bitter cocoa and coffee with unsweetened whipped cream doesn't make me want to try this recipe.
It’s possible that she is making a dessert for someone that can’t have much sugar🤷♀️…I love that she made her own whipped cream though I’d sweeten it with some powdered sugar or leave it unsweetened and add a little sugar to the coffee. A very novel twist on a favorite of myself and many others. I would do a couple things different but I guess is one of the “ joys of cooking.” Instead of dumping entire package of lady fingers in and pouring coffee over, I will do half at a time. Put more whipped cream mixture on it. And put some of that shaved milk chocolate over whipped cream before rolling it up. Can’t wait to try it.

Whipped cream doesn’t need sugar. I have friends from UK and they never add sugar . Everything they make tastes amazing
I would add two tablespoons of Ghirardelli white cocoa powder to the whip cream
Need sugar in the whipped cream at least. Cocoa powder is bitter, coffee will taste bitter too.
